Typically the tuna filling is made with Kewpie Mayo the main difference being that it's made with only egg yolk. If you can't find that and can find Blue Plate that's also a very simple all yolk recipe mayo that is a bit closer than something like Kraft, Helmans or Dukes.
I just used these papers to make me some myself. And man, they were so good. I have some left in the fridge for later because i know i’m going to be craving them later.

wrapping it in the seaweed is so much more simple than i thought it was what mine looks so bad bc i tried to freestyle it

There's tons of vinegars, Red wine, rice, balsamic, cleaning, white, etc etc
Rice wine vinegar has some sugar in it. It is milder in flavor very nice
