Pasta and potatoes with Neapolitan provola

    INGREDIENTS FOR 4 PEOPLE
    220 g of pasta (tubes, mixed pasta, wheels)
    500 g potatoes (weighed already peeled)
    1 piece of onion (40g)
    1 piece of carrot (30g)
    1 stick of celery (30g)
    3 tablespoons of tomato sauce (or 6-7 cherry tomatoes)
    4-5 tablespoons of extra virgin olive oil
    Salt up to taste
    50 g of grated Parmesan
    150 g of smoked provola
    5-6 parmesan or parmesan peels (optional)
    750 ml of water approx
