    RECIPE
    270 gr bread flour (12.7% protein content) (plus more for dusting)
    30 gr whole wheat flour
    230 gr water
    60 gr active starter (100% hydration)
    4 gr fine sea salt
    Baker's percentage
    Bread flour 90%
    Whole wheat flour 10%
    Water 77%
    Starter 20%
    Salt 1%
