Sam, a tip for canned enchilada sauce, that Las Palmas tastes good, but a bit like the can in came in, so look for El Pato canned enchilada sauce. Always found in Mexican markets and some big chain markets, made in LA. It has a bit more spice and the flavor is superb. Once you try it, you'll use nothing else. Absolutely love your channel!
El Pato is the best. 99 Cent Stores sell it.

Better than any restaurant enchiladas I've ever had! These were amazing. I used cold smoked pepper jack for a hint of smokiness. Can't wait to make them again.

Made this for the family tonight, first time they tried enchiladas. Absolutely FLOORED them! I cut the green chile to half a can and did 1.5 pounds of brisket. Used monterey jack on the kids side, pepper jack on ours. Awesome recipe!

I've done that awesome (my own personal recipe same thing for years and well yeah a very, very, very long time!) Oh I think I might of just gave my age away🤪😊 adding a roasted chili give them better flavor ❤ I don't use floor tortillas, I make Corn tortillas by hand so that I can make them bigger around.

I made this tonight....absolutely delicious, and pretty easy! Sam, I even used your 7" Nakiri knife and a clever to chop up my beef in to ground beef....couldn't find a small chunk of brisket, so I used a 1.5 lbs. NY strip....worked perfect!....thanks sir, love your cooking!

My mom passed away in October and Thank God for you!!! Your humor and recipes have helped keep me going through all the shit the death of a parent brings go through. Talking about the knife rocking back and forth to cut the meat, I was thinking you might try an Alaskan Ulu. They are an incredibly useful tool and rock back and forth really well. The best restaurant in my town in Alaska was a Mexican place called Mosey's (their dog) who made everything with fresh seafood. Green chili shrimp enchiladas to die for! Halibut mole burritos. Crab tamales. Would love to see you try something like that ❤ Anyway, thanks for what you do.

I’ve been eating these enchiladas since the 80’s when my Mom first made them. She developed the recipe to try to match a local favorite Mexican restaurant’s enchiladas. I switch it up sometimes & use chicken instead of beef & green enchiladas sauce, but the key is the pepper jack cheese.
Have made them a few times now and they’re absolutely delicious!

OMG you are so right about thickening the echilada sauce! Makes a ton of difference! I even dunk my whole tortilla in the sauce and then stuff it. Holy crap what a mess but deliciousness out the ying yang! Only thing is you said you were going to address the onions and beef and I don't think you ever really spoke to them after that. Love your cooking! It is inspiring!

An outstanding recipe! Just made it and it was a hit!! Only thing I did differently was grill the brisket to brown it, then cut it up and put it in the skillet with the onions and jalapeños 👌

The best enchilada sauce is the sauce from Wahoo’s a found out they do the same canned sauce but blend it with vegetable stock onions and garlic

Made this recipe earlier this week, OMG so good, it was a hit in my house, I make like 15 of these and they were all gone in one sitting. We made it with just ground beef and colby jack cheese and I had to substitute some chilies in adobo instead of the green chili but it was awesome, hardest part was finding enchilada sauce in my area, go figure.

Watching in Europe, you lost us at 'a can of enchilada sauce'. 🌸
Make your own as I do. If you care to do this this is my mother's recipe. I don't weigh out my ingredients however.
3 Tablespoons of bacon fat or oil.
3 Tablespoons of flour.
Make a very dark rue, think dark brown.
Remove from heat and add
1 teaspoon salt
2 beef bullion cubes
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
2 Tablespoons red chili powder
Return to heat. Slowly add 1.5 - 2 cups boiling water, mixing well, until smooth and thickened.

If you are ever in the Phoenix area, there is a place called Gadzooks. They do enchiladas in a style similar to chipotle and they are FANTASTIC!
I love the shortrib and the spicy cornbread. They make their own corn and 50/50 blend tortillas. They have all sorts of proteins, sauces, and other fixings. You definitely should give it a try!

That is the best Enchorido recipe I have ever seen. You’re defensiveness about corn tortillas is because you know it’s not the right way. Take a corn tortilla, heat it on a cast iron skillet until it’s flexible enough, then do everything exactly the same. That’s what I’m gonna do, because the recipe is fantastic otherwise, but it’s San Diego, be legit.
