    I did the pantry challenge with you Becky. My rules were: 1. To spend only $50 a month. 2. Get my food insurance organized. 3. Use the soon to expire. 4. Donate any food we aren't using or will expire before we can use it. There is only my son and I. First, my son is grown. So I didn't make him follow the challenge. So this is how I did. 1. I only spent $38.27 and 2. I didn't get my big freezer organized, but I did use alot out of it. 3. I didn't find anything that had expired, but I did find stuff that was from 2020. So I used it. Finally 4. I was able to donate 4 grocery bags of things I know we weren't going use before they expired, and the family was very thankful. NOW , (as of March 1) I am doing a Spring Cleaning Challenge. My goal is a room a week . And that challenge goes until PASSOVER (April 4). Sorry for a long answers.

      I've found a lot of meat stock piled in my freezer. I'm know making homemade dog food after consulting with my vet for a healthy balanced food for our chubby dogs ( and cut down dramatically on treats).

    One thing you can do for next year's pantry challenge is to take advantage of your seed trays and grow lights and grow micro greens - you'll have fresh greens of all kinds the entire time that way.

      I don't like veggies, for the most part, but micro greens, I can do. Throw them in a recipe, casserole or salad. That broccoli does have a little bite though...lol

      I just bought a few seeds and trays to grow my own micro greens! I realized I had some seeds that were old that I need to use up but will never grow in the garden. Micro greens are the perfect way to use them up! I’m excited to try them!

    Just a little FYI, if you want a pantry challenge win for next year... You always have frozen milk and the shelf stable cream, just mix equal portions of each in a pitcher for half and half coffee creamer. You can adjust the portions to suit your taste.

    I’m 58 yrs old and at one time my husband and I grew our own vegetable but we were by no means at your level. I have learned so much from you and wish I had had your channel at the time when I was learning. I watch other homesteaders as well, however you are by far the most amazing. Your common sense, and realistic approach to storage and food security will help so many who are starting out. Homesteading, today especially, is needed. Your knowledge blows me away and I have never been so excited to receive notification like I am with your channel. I truly believe you will eventually have your own show. Keep up the amazing work you do, you are a blessing to so many.

    I started with your no knead bread and now I make sourdough bread in six weeks. I’m so proud of myself. I’m 61 and it’s the first homemade bread I’ve ever made.

    I use a permanent marker and write the price I paid on the container and the date so I have a reference of how much costs have gone up. It also give me a good idea of how long it takes to consume an item.

    My daughter started making little baggies full of carrots, onions and celery and freezing them. They are a great beginning to most recipes and it is really handy to have them all chopped and ready to go.

      I also do this we shop fortnightly as we live out of town. Yes I work in town but I hate to grocery shop. Also it’s 45mins to 1 hour to get home I’m out 12 hours a day still have to come home cook and feed the family get chores done and tend to the garden etc so having items precut and ready to go in my fridge and freezer make my nights so much easier. I feel it has also touchy my kids great meal planning and great tips to start them on their journeys as they leave home

      I do the same thing. Bell peppers & onions, and some with celery. Also carrots. I get these snack size ziplock bags and it's the perfect amount for most of my cooking.😊

      Smart idea. Living in an apartment without a backyard, I plan to buy a ton of celery when it is on sale, clean it, chop it up, and put it in the freezer. Fresh celery is expensive.

    Not only birthed baby A, but….suffered and recouped a spinal fluid leak, put away Christmas, painted, huge family dinner party, made so many treats for the landscapers(from previously frozen) and things I just forgot! Pretty amazing, and inspiring!! Thank you Becky. You are a treasure 💕

    My husband and I recently developed Covid 19, he was totally floored for 10 days, I was lucky and mine only lasted 3 days but we had to isolate. Boy was I glad I had a freezer full of freezer meals and a pantry that kept us going even if only for those couple of weeks.

    Sorry, this comment isn’t for this video.
    I looked for the video where Becky made “Easy Valentines Day Nougat” but couldn’t find it. So, my cousin/friend and I made this nougat. We are both in our 60’s and I can’t remember the last time I laughed so hard! It is the stickiest stuff I’ve ever gotten into! I bought Dots candy, which itself is sticky and sticks to every knife I tried to cut it with. I couldn’t even stir the marshmallow mixture with a rubber spatula it got stuck to the side of the bowl. We ended up buttering our hands and dragging it out of the bowl. It was delicious and we had a hilarious time making it! I have zero idea how Becky made it look so easy but you should make it with a friend!

    I live in the Netherlands, so maybe different cheese, but I freeze grated cheese that I buy on a block when it is on sale, I put a little cornstarch trough it and freeze it in ziplockbags. Works perfectly. I really enjoy your video's, keep them coming.

    Another option for one of those times you get snowed in: For that half and half for your coffee use one of the shelf stable creams from Trader Joes and add some milk - maybe from the milk stored in the freezer or powdered milk reconstituted.

    Becky you may not have achieved all the goals on your list but oh my you achieved an enormous amount and just a short while after becoming a Mom for the first time. You did a brilliant job. The other pasta at Trader Joe’s Becky didn’t buy was Trofie which is from the region of Liguria in Italy and is usually mixed with potatoes, green beans and pesto, delicious.

    Thank you for sharing your knowledge. One of the biggest thing I have learned from you is to cook double and freeze half of it. It helps me to have the energy to put thought and effort to making delicious food and not just throw something together quickly. I don’t have to make everything at every meal now.

    I did a pantry challenge of sorts, one of the things I want to do in these uncertain times is have plenty of powdered products on hand so I can get by mostly without needing dairy. I now have powdered milk, powdered, coconut cream, powdered buttermilk, and powdered coconut milk in my pantry. Also working on a good supply of nuts, dried fruit, and some dried veggies. You do inspire me to do better! And all that with a new baby, you are amazing!! I can't believe how much things have gone up, I am making more and more things from scratch or doing without.

    For this years pantry challenge, I wanted to make the best use of what I buy.
    So, I made a small batch of broth instead of throwing away the bones. I used leftovers to make new meals instead of throwing them away. If I cooked too much pasta, I froze it.
    I realised before pantry challenge that I was throwing a lot of leftovers away which could have been made into new things, so although I didn’t have a no spend challenge, I challenged myself to use more of what I did buy & make better use of the money I spent. (Fussy children also sometimes 😊)

      Haha I froze leftover fettuccini noodles for the first time then used them in chicken soup. I couldnt believe how good it was but was sad I threw excess noodles away all these years.

    (As a bakery owner) When baking you should only use unsalted butter because almost all recipes call for a certain amount of salt. If you use salted butter than you should skip the added salt in the recipe.

    I cleared out so much in my freezers and pantry I was shocked. Some freezer burnt and some outdated products. I saved a ton and needed it for car repairs.
    Things I learned. The basic amount I use in a year. I learned how to limit my essentials list. Like making my own brown sugar.
    The biggest change for this year is I admit to disliking gardening. I will purchase fresh produce from my local farmers instead. 1 case of bell peppers is 1 years worth for me.
    Goals for 2023 better airtight storage containers and getting vacuum bags. Lastly go get that trader Joe's box cream! Thanks for all you do. You brighten my lonely day.

    Buying bulk cheese from Azure and cutting down to smaller blocks and freezing … ensures you always have cheese around… same with cream cheese. I was skeptical at first but it works.

    I started with several strict rules and realized very quickly that with 3 kids on the run, I was in no way prepared 😳. We found ourselves stopping for food out way to much. I learned that I need grab and go food and snacks and to do more crock pot meals for quick, dump and go recipes. I did get a lot of preservation out of my freezer to make space. I still have a bit to do but progress. 😊 Also, my children began baking some during the challenge which is awesome. Now to get them to clean behind themselves 😂.
    Oh, I did not do well documenting what we ate all 3 meals 🤪.

    When I saw that one tomato in whole haul and learned it costed more than a dollar, I was shocked ! Here in India we already have spring and it is the best harvest season. Currently, we are buying 1kg which is more than 2 pounds of tomato for 5-10 Rs which is like 5-10 cents. Me and my mother did a lot of produce preservation projects last month like sun drying , making different sauces, chips and pickles.

    I love everything you said. And THIS is why every person in my family (including all the boys/men) know how to cook. Food insurance, yes, and knowing how to take the ingredients you (still) have and make great meals is just so key. You never know nowadays what might happen.     I did a very low key pantry challenge - it was more of a pantry focus than really a challenge. But I was trying to focus on using more stuff from the pantry/freezer instead of buying new stuff. I learned I really want to have more meats frozen that I have organized better so I can use (and not forget about it) and I need to focus more on pantry items I buy. I have a lot of stuff that I don't really use and they're taking up space on my very limited shelves instead of the stuff I *actually* use. I'm going to round it off by gathering up some of the canned goods I'm not really going to use and donate to our local food bank.

    You're a doll, I always look forward to watching your videos. I'm a 66 years old southern woman and grew up with what I can say the old days. I have a brother and sister and the 3 of us would have to work a large garden that we ate out of all year. We were taught how to care and harvest a garden and at the time we didn't like it. We never grew corn because it would have taken up to much room so my parents always purchase it from a family friend. We would have a great vacation the week of the 4th but at the same time we always kinda dreaded it at the same time because we knew we would have corn waiting 😀 on us when we got home. It would always be around 12-16 dozen ears and at that time in our life we hated it. It felt like we would ever finish with that corn. Looking back now what a great memory because both of my parents have passed. I still put things up but on a lot smaller scale but after watching you and Jessica I'm going to have a small garden for my husband and me. I have never seen a electric pressure cooker but again after watching you I order one for myself today so you're rubbing off baby. You're just a amazing young woman.

    Love this Becky! I too last shopped on December 28th and it was mainly for New Year’s Eve snack foods and dinner New Year’s Day.
    I have really been able to see what I have stocked up in my pantry and my husband has learned to eat different foods. Lol he’s the picky eater.
    I cleaned out my freezers of all the berries I had frozen and now I have 12 jars of blueberry jam and 16 strawberry jam! I still have some rhubarb to do something with, but have to decide what I’m doing with it. Lol I am starting to make a list of the items I am running low on but have realized that my family could live for 9 months to a year just from my pantry! I want to continue this trend and have to say this is a very comforting thought to me, to know if there is an emergency of any type, we can eat.
    This pantry challenge is such a good idea and I’m thankful for Jessica from Three rivers Homestead and you and others who helped us through it and had wonderful ideas of what to cook, how to organize, what to plan for next.

    PS. I only ran out of coffee and that was the only purchase I made during the challenge. Lol ( my rule was to spend less than $100 during the challenge so the coffee was way less than that.).

    Thank you for the push to cook with more fresh and whole foods. I have also been trying to reduce my food waste, as I often end up having fresh food go bad. My health doesn't always allow me to cook in-depth meals, so I've been trying to do some meal prep to freeze for the days I'm not able to be up and around much. My husband is amazing and will cook when he can, but he is also having health issues. We're a pair, but we'll get through it together. Thank you for all your hard work Becky, and your willingness to share it with us. 😊

    I also like the minimalist approach to food storage, stocking well the items you use regularly. Being flexible is also important in a challenge ( or not) when you do happen to run out of something - always have a backup plan and a variety of recipes handy.

      There is no reason to take up precious pantry real estate with items you don’t/won’t ever use. If I’m not using it up, I try to make a recipe with the item or donate it to a food bank. It gets the item off my shelf and I don’t purchase it in the future. I fill the spot with something I am truly going to use. A good deal is not a good deal if you’re not a fan of the product. It doesn’t hurt to try new things, but if you don’t like it, don’t keep it just because you spent money on it. Find someone who will use it. No food waste.

    If there are things you truly don’t want or won’t use please consider giving them to a food bank or posting them in your neighborhood news “room” if you have one. I let people in my congregation know when I have more than I can get through too. There’s always someone who would absolutely love and appreciate anything you don’t want or need.

    I've noticed for a while now that when you try a new recipe you just pretty much wing some of the ingredients, just a little tip here from a chef whenever we try a new recipe we always do it exactly as written and this way we know what the product should look like and taste like and then when you go to make it again, you can add your own twist to it and make it your own! You should also try freeze-drying your avocados and see how you like them! Happy homesteading! :)

    I live in a small house with a small yard but I did incorporate several of your suggestions like prechopping veggies and throwing them in the freezer, using up pantry items, reducing the number of different things I buy. Pre making breakfast items. Tyty❤

    I was bummed that this years pantry challenge was unsuccessful in the since that I didn't meet ALL of my goals. I did learn that I need to make a better effort at taking meats out the freezer instead of just going and buying fresh meat at the grocery store. I did can a few new items, cleared the freezer of blueberries, strawberries, tomatoes, pumpkin puree, shredded zucchini, some chicken. Tried a few new dinner recipes and meal preps that my family loved! We did more homemade items like breads, tortillas, sweet treats, sauces, spice blends, and dressings that we all agreed to stick to instead of buying. We found ways to repurpose items instead of just tossing to the chickens, like stale bread to croutons, bread crumbs, and bread puddings. I will make a better effort to chisel away at our freezer items.

    Becky, I am so thankful that I discovered your channel. I am going to be buying property after living on Maui where my husband is from here in my hometown of San Antonio and am so passionate about finally starting my dream of having gardens for veggies and grow by personal store with more canning and preserving. I went through a breast cancer scare and had to under go surgery and it was successful as it was caught extremely early and I decided to finally fulfill my dream. I came across your channel and am so thankful. You have taught me so much and have given me great ideas. My husband is excited to do salt curing as he is knowledgeable in that and he is the green thumb so he is excited to start our gardens.       @@kathycamasso6672 Thank you so much. My adult sons said that I should follow my dream, they said especially after raising them to both be successful young men who now have successful careers. I have always felt guilty to only focus on what I want and I think it was because I was a single mother and always put my 2 boys first but they are now 30 and 28 and have successful careers but I guess one never gets out of that mind set. Becky and her videos have been inspiring to me and she puts things so simply and I have seen the comments from past videos and have seen that she truly has a great community who are kind and so supportive of each other.     Several weeks ago I started using 1 item from my freezer for every meal that I made. The freezer had gotten Very full and I needed to make room. I didn't want to be buying what I already had. Since my husband and I take turns cooking I would share with him what I was using from the freezer.After a time he started looking more in the freezer too on his nights to cook. My latest adventure has been learning how to use sourdough.I have made bread French bread crackers Muffins And today I'm trying English muffins. I think the skill Could be very handy moving forward. No skills are ever lost!💜

    We understand. Ideally, you want to go deep and narrow with your food storage rather than narrow and wide. It's what I decided to do last year and it makes managing inventory, inventory rotation and restocking so much easier. It allows you to spend less time managing that area of your life and more time doing other things you enjoy!

    I sure enjoy our visits with you! I'm excited about growing more vegetables this year. I've planted seeds already, but I may have to start again. I don't have grow lights or the pads to keep them warm. Not a problem though. My 2 grandddaughters enjoy just digging in the dirt and watching plants grow with me. Love from SC!

    Thank you for being so informative and so encouraging to all of us. We did do the pantry challenge. We discovered that we could make really wonderful meals with what we have. We only bought items that were on sale to preserve. Because I felt like if I passed up such a good price on beef I would be kicking myself for not taking advantage of the sale. We did run out of onions , which made us sad because we love onions. I definitely learned to put up more onions in our pantry.

    I wasn't as well stocked but I did a pantry challenge to only spend $50/week for those two months and was able to do that by using up lots of things in my freezer and pantry. Also trying our first little garden this year to see how it goes, haven't tried canning yet.

    I had three weeks off of work and I used that time to prepare my pantry more then I have and to increase my skill set. This way hopefully next year I will also be able to do the pantry challenge. However we have winter in July- August in Australia so maybe I’ll do it then. ❤❤

    This was a true blessing. I was encouraged to go through my freezers, pantry, and home canned products. Found some things we really liked and some things not so much. We only did a 1month challenge but was so encouraged. Will probably join you in summer. Loved seeing the updates every week.

    I feel you on minimizing the types of items in food storage, while maximizing the stuff truly used. A surprising awesome help with this was the homesteading families recipe for bread dough left in the fridge. I just grab my dough out for the day, shape it, and bake it once rose. Also, for cheese, you may want to check out waxing cheese. It seems easy enough to get started with, and with a bit of trial and error, may end up being a wonderful food storage addition. Finally, use your storms to guage when to set your pantry challenge next year. We are in 7b also, though in the east, and our snow isn't bad in dec and jan, but feb and march and lay down with feet easily.

    I love Redmond's toothpaste! I'm surprised that you don't use it. I have extremely sensitive teeth and have been using Sensodyne since I was 18 years old. I've grown to dislike mint flavoring, so when you told us about your Redmond Real Salt coupon code, I went to the website and found their toothpaste. I loved the wintergreen flavor! I need to order more. 😃

    I learned very similar points...need to preserve more produce. This year I'm going to try to increase production and still allow me to share with others. Last year I couldn't keep green beans...everyone wanted some! I love to share.

    I did do the pantry challenge and realized that I do keep track pretty well what is in the pantries, freezers, and seed stocks. What I was not successful at was getting started early enough in my day to accomplish more freezer meals or canning up items. My old body does not like staying up until after the midnight hour any more. Also, I was able to really go through and work at using up what we don't like in other ways and making notes as to what I did with said product, just in case I come across a good deal! LOL I did get my seeds all started in the greenhouses and it is still way to wet and rainy here to plant a darn thing.

    I’m moving into my first spring/summer garden and I think the preservation part will be the biggest challenge for me. It’s not something I’ve ever had to do this methodically and to this degree. I started in August and have had to preserve some things and it really can take full days to get these things done. I commend you and those that have done this for years and who have excelled at it. I did do the challenge and what I learned would make this comment way too long, but in short meal-planning is important and being realistic about what kind of storage I need for two people.

      Congrats on your first year of growing!
      Don't beat yourself up. You will have successes and failures. I STRONGLY suggest you start a gardening journal. Keep track of when you started seeds, when they germinated, when you uppotted. What you direct sowed etc.
      Write down any pest problems and when they happened. How often you fertilized and what you used.
      It seems cumbersome but you'll be glad you took the time. All these things will help you NEXT year.
      Gardening is a journey. May this be blessed with bountiful harvests. 🙏🙌♥️
