Luscious Lemon Cream Pie

  • If you love the flavor of lemon, you must experience this lemon cream pie. This pie is creamy, velvety smooth. Each bite melts in your mouth, with the exciting flavor of fresh lemon.
    INGREDIENTS:
    Crust:
    o 10 Graham cracker sheets
    o 3 tablespoons unsalted butter
    o Zest of 1 lemon
    o ½ tablespoon sugar
    Lemon filling:
    o 2 -14oz cans condensed milk
    o 4 large egg yolks
    o ¾ cup fresh lemon juice
    o Zest of 1 lemon
    Whipped Topping:
    o 1 ½ cup heavy cream
    o 3 tablespoons confectioners’ sugar
    o ½ teaspoon vanilla extract
    INSTRUCTIONS:
    1. Preheat oven to 350 degrees. Place whole graham crackers and lemon zest into a food processor, process on medium until cookies form a loose crumb. Pour crumbs into a bowl, add in butter and vanilla extract. Add mixture to a 9inch pie pan. Using the bottom of a measuring spoon press the crumbs into the pan.
    2. In a large mixing bowl add in condensed milk, lemon juice and egg yolks. Using a hand mixer, beat until smooth. Add in lemon zest and whip again until smooth. If desired add in yellow gel food coloring, until you achieve color of choice.
    3. Pour filling into the prepared graham cracker crust. Bake for 18-20 minutes, until center is firm and no longer jiggles.
    4. To make the whipped cream, add c very cold heavy cream, confectioners’ sugar and vanilla extract, to a mixing bowl. Whisk on high until firm/fluffy. Add whipped topping to pie desired. For a decorative effect, add to a piping bag and pipe onto lemon cream pie.
