  • Come along as I cook my very first turkey, and I did it with a salters warranted spit jack rotisserie and an open fireplace. Cooking a turkey in the stone fireplace of the log cabin. Also making sourdough bread without measuring any ingredients. Thanksgiving with friends.

    This is the best Thanksgiving dinner I've ever been to without actually attending in person......thank you for inviting us to attend via video 😃 I am using a new pumpkin pie recipe this year for Thanksgiving.....making an eggnog pumpkin pie.....hoping it turns out delish.     I've cooked in a Fireplace and it's such a good thing to have a Fireplace! People do not understand that having a wood burning Fireplace is important, even if you do have electricity and gas .
    Losing power for 4 or 5 days, and still being able to have meals is quite important, if you don't own an outdoor grill. Also supplies heat if needed. It really irks me to see people " cover up " a Fireplace ( why ???!) or turn a woodburning one into a gas conversion.
    I'd have some kind of Fireplace in every room, if possible! Lol.
    I always cook the dressing ( stuffing ) in a separate pan , because it is safer than cooking it inside the turkey, the turkey takes longer if it has stuffing inside. My Grandmother was a great cook, and made so much from scratch , she had all the recipes in her head, it was amazing. I've cooked Thanksgiving Suppers for many years, by myself... I start one to 2 days ahead of time , and that really helps take away the " frustration level ", lol.
    ( taught that by my Grandmother).
    I commend you, for doing this,.. cooking in order to have Thanksgiving with your friends . The bread looks sooooo good !

    Good morning Jerry! I am so impressed that you gave this fire place roast turkey a try. I saw one of those of colonial cranks at a tour of our Strawberry Banke in Portsmouth, NH. I'm sure you could contact them and ask questions. This answers my question as to how far back you are going into our country's history. Its wonderful to see you researching and emulating how the colonial cooks managed their fireplace kitchens. I will use some of the early traditions and recipes, but mostly stay between 1900 and 1940. My 1930 farm recipes come out well in our 1930 kitchen wood 🔥 stove :-) Love-love sour dough! ~ Diane

    The cooking smells in your kitchen has got to be phenomenal just like in a real house, I prefer the cabin because I grew up cooking like old school and still do and when the dinner is over I can't get any one to leave because they want to eat more and they tell me they are so relaxed and content and they have never been so humbled, they want to live like this, like I said I love the simple life, you just have to adjust, and by the way my turkey was a wild turkey 🦃 whole different way to cook it, thanks for the 📸 video

    Happy Thanksgiving!🦃....I really appreciate you taking us back in time. It's unbelievable the hardship & hardwork that colonial & pioneer women/men went through to prepare a Thanksgiving meal. I loved seeing so many antique cooking devices, the dough mixer and the colonial crank. It's my first time seeing those. You done a great job at preparing dinner for your friends. I'm sure this is one Thanksgiving meal they will never forget! I know it was a blessing for me to watch. Thank you for sharing it with us.❤️

    Very interesting video and bravo for you trying how to cook from the old days but here a tip for you, in those times most women cooked bread in the Dutch ovens. I have them (creuset France) and used them to cook bread in and it works really wonderfully. Remember to heat the pot before you put the bread in and hardly any chances to burn your bread.

    Tips from experienced cooks who make the whole meal with just one oven: Cook the turkey without the stuffing. Cook the stuffing separately in the oven, and you can use drippings from the turkey to flavor it. The internal temperature of the bird will be more even compared to the outside. Faster cooking time. Make the bread ahead of time in the morning! Mix the stuffing ahead of time in the morning. Then pop the stuffing in the oven when you have drippings from the cooking turkey to add to it. Let the bird rest before carving. Then just warm the bread for a minute in the oven before serving.

    Really enjoyed this one. After I recently smoked a turkey for the first time for a family gathering. I was 45 minutes late because it took way longer than expected. It all turned out well.     Frustrating yes and we’ve all been there but believe me you, you wouldn’t find me turning down that invitation no matter if the turkey was burnt to a crisp 😋 Me too, never cooked a turkey most of my life, and when I did it was in an electric oven! Can thoroughly appreciate all the time and effort my mother put into it. So impressive seeing it done by the fire. Hmmm … blue plastic jug 😉 funny how modern things become so visible when they’re from another era. My project this winter … make some homemade bread, perhaps I’ll try your mothers recipe, seen in one of your others videos. Thanks Brenda & Yves

    My Dad, born in 1916, cooked in the open fireplace. He had swinging arms set up and could swing the pot out to check it, season it or remove.

    Hey Jerry, I’m joe from NYC and I’m new to your channel. Absolutely loving it! I’m a foodie and this just might be right up your alley . I see that the rotisserie is your favorite. What about a turkey roulade? I totally deboned the turkey without breaking the skin except cutting down the backbone. Learned this on CZcams! I stuffed is and it was a success and now it’s the only way I don’t it. I would love to send you a picture of the turkey but I don’t know how.

    Cooking is a lot of work and coordination combined with artistic flair. I usually sauté up the onion and celery in my stuffing before combining with the bread cubes and stuffing the bird. A bit of melted fat in the mix is a good idea, too. I bet you got a lot more flavor your way as long as the celery cooked through. What an awesome way to cook a turkey. I’m going to have to try that some time. With a Holiday meal/get together something always goes Murphy’s Law. Lol. Thanks for sharing.

    If you have any secrets to getting a good sourdough starter going, please pass them on. Call me crazy, but I would have been asking for that nice dark bread and some good olive oil for dipping! Good job on you first turkey, no one that I know hosts this meal without being stressed. My sister had a Pyrex dish full of something explode all over the room!! Fun times!!!😂

    I had friends brine the turkey before cooking and it turned out incredibly well. I wonder if it would have worked with wood fired cooking. Also I learned a few years ago about spatch-cock turkey. Basically cutting up the turkey for easier cooking, but mostly in the oven. Something to look into if you want.

    Well Happy Thanksgiving to you and success with your first turkey as long as it's impeccably clean and personally I would have removed that plastic band that's holding the legs together to me that's dangerous and I wouldn't want that melted plastic on my turkey but enjoy I didn't see you season it or anything but hey good luck with your first turkey!!

    I try too avoid having turkey on thanksgiving because it’s so time consuming. I use a modern oven and I can’t imagine taking on cooking one like you did plus never doing it before. You did good.

    Bruh.......that turkey looked fabulous! Couple of base line recommendations. Bring your turkey to room temp before cooking. All those guides in the literature accompanying the bird are meant to alleviate their legal liability. Trust me. I'm the man of the house and have been cooking the bird for 35 years. Room temp is were you want to start.
    The bread was amazing! Bother with the over browned! I spent 6 years in Italy! Those were the good loaves!
    Never stress about a holiday meal! It will be done when it's done! Your guests are not going to leave on you. Just chill and have a glass of cider and when it's done, you eat!

    I once raised 6 turkeys during my Mother Earth News period.. Free range on my 55 acres... The coyotes and dogs got three!!!!
    A local told me how to
    Laughter.. Just grab the head and spin him around and break his neck..
    He didn't exactly die... He was spinning around on the ground.... So I stomped on his head... I tried an axe on number 2.... Apparently missed the vitals and he was also spinning around and spewing blood... Stomped on him!!!! #3 I decided to shoot while in his cage... He looked right at my 22....his head disintegrated... I buried all three!!!!! And bought a turkey!!!!

    Hey Jerry , just recently found your channel , your cabin is awesome ! As i redo this old house to replicate the , old days , & ways , look -- i'm looking at your lights and wondering where i can get some , like the ones you have .
    As for your turkey dinner slight disappointment's , its all about mak'in memories , and i'll bet everyone had a great time , and waiting to come back !!!!!!
    As for me --- the first bird i cooked in a wood cook stove , followed directions/instructions , i thought to a T --- everyone that ate it got food poisoning , including me , Not many will eat my cooking anymore hahahahahahaha

    The stuffing acts as an insulator and slows down the cooking time for the turkey. Maybe next time, cook the stuffing in a pan in the oven. You can add some herbs in the turkey cavity with some onion, etc to help flavor the bird. Happy Thanksgiving! 🍂🦃🍁

      Yep - always cook the sfuffing 1st - put it hot inside the turkey ( dont forget to take the wrapped giblets out 1st if store bought ) which helps to cook it from the inside as well

    Hey man fool proof way to cook a turkey chicken or ham / deep fry it in peanut oil or oil of your choice / take your pot out side what ever you you cook put it in the pot , cover it with water, mark the water line in side the pot. Take out what you are cooking, dry off what you are going to deep fry with paper towels, poor off water put oil in pot to the the line / watch the oil temp slowly lower it in to the fire pot /cook to time / take out drip dry oil then eat / deep fry is so good / stays moist in side try it you will like it for sure

    Like your videos I have the same spit Jack but it's missing something to turn the meat. I fixed the gears inside and a bracket but I can't figure the rest out. I'm from Ellsworth so we're local do you think I could look at your spitjack somehow

    It's been 14 years since we cooked a store bought bird and wild bird has many options Turkey, Grouse ,Sage hens Goose, Duck all are great eating , Happy Hunting..?

    Just remember basting is the key basting basting it will come out great season in side butter under skin if you can

    How did you keep the turkey from drying out? I would make something you can set the bird in with some water and cover it so it steams it with all that airflow I bet it was so dry lol but good attempt.
