    Potato Salad with Yuzu and Ginger
    [Ingredients] 2 servings
    Potatoes --- 2 medium
    1/2 carrot
    1/2 small fresh onion
    1/2 cucumber
    1/2 pickled ginger in sweet vinegar
    A Salt and pepper --- a pinch
    A 5 tablespoons mayonnaise

    [Steps]
    Cut potatoes into quarters.
     Place in a pot of boiling water and boil for 10 minutes.
    2) If you can easily pass chopsticks through the potatoes, it is OK.
    Cut carrot into half-moon slices and boil gently for 1 minute.
    Slice cucumber into thin round slices.
     Cut the fresh onion into thin slices about 5 mm wide.

    Cut eggplant, zucchini and okra into sticks.
