    Unlike regular chicken, it’s very lean like free-range chicken, and frying would make it tougher. These are better in a stew, which is how they are often served, usually with medicinal herbs.

      Even if it is cooked in the proper way, I still cannot handle its taste and texture, the flavor is too weird and the meat is mushy. This chicken is healthy but it is not something that everyone can enjoy

      eye round of chicken. it is lean and no taste. just pure protein. It is used in herbal soup for healthier reason and doesn't make the soup oily.

    Guga, I know that you have been doing this for years, but It has to be said. Whenever you are doing a comparison and you go to the side-dish first before the second or 3rd option, that changes the flavor profile in your mouth, is not doing a palete cleansing [like pickled ginger would do], so the second meat or whatever is then competing with the side dish, not with the control. I think is worth taking this into consideration.

      Agree, i like all of the videos but keeping the main dish after side dish tasting is not exactly comparing. I think he keeps the main dish for climax like in movies but unfortunately that's not how this works in this scenario. Also, honestly it's always frustrating too.

    Guga has made Silkie chicken before.
    If the chicken has a slight fish taste then the chicken was fed fishmeal. Silkie and well most chicken that's not normal/typical meat chicken has more flavour due to being older and fed a different diet with a lower protein content and more variety in their feed

    Black chickens taste really good boiled whole with 1 stalk of lemon grass. A corn fed and free ranged one tastes better boiled. Time and add tofu to it so they both finish cooking at the same time. Adds a nice creamy taste and texture. Different breeds of black chicken also matter when it comes to taste.

    It might have been fairer to make pot pies out of it, so the color wouldn't have been as obvious.
    On the other hand, I would probably have just roasted it.
    That steak and cheese dip looked fantastic.
    Leave it to Guga to sneak some steak into a video about chicken!

      I think the problem here is that the spices/taste he added to both were ideal for regular chicken, but obviously not to something that tastes differently. You'd need other ingredients to bring out the best of it. You can't just cook a wagyu steak like a regular steak either.

      "natural breed" chickens tend to have stronger and distinct taste than the typical cornish cross chicken. Anyways, soup still would make the most sense as its how it is usually cooked.

    5:37 "Fried chicken will always be better than any other chicken." I dunno Guga, I'm a big sucker for chicken inasal. Marinated overnight in a mixture of vinegar, citrus, garlic, ginger, lemongrass, sugar, salt, and pepper, grilled on an open flame while constantly being basted in a savory annatto oil mixture and served with rice and a soy-citrus-vinegar dip, it's the Filipino version of barbecue chicken and if made well ends up incredibly delicious with a lot of juices still in the meat. Yes, even if you use chicken breasts.

      Chicken in cream of chicken soup is wonderful, roasted chicken on pasta is amazing, and don't even get me started on chicken satay, kufte, and shish-tawook.
      And then there's chicken plus ginger in literally any form. Chicken + ginger is a combination you _cannot_ go wrong with.

    Guga, Silkie chickens are traditionally cooked with medicinal herbs and spices (ginseng, goji berries, jujubies, etc.) to make a therapeutic chicken soup. What you ought to have done is to wait until two people both get sick, then make an Asian style medicinal chicken soup vs a western chicken soup, and serve each sick person one of the two options to see who heals faster.

    In Indonesia, they called it Cemani Chicken. They are usually made as part of some kind of old ritual, or part of a Old-time beliefs. Then what about the price? they often sold at unreasonable prices.

      Its silkie chicken, not cemani. The meat wasn't as black as cemani. Silkie chicken has fur-like feathers while cemani has "normal" feathers.

      The difference between Cemani and Silky is the meat and innard, Cemani is more like coal-colored than Silky and everything is pitch black including the organs while Silky only get black colored on outside but inside was not that black like Cemani have.
      My Grandpa used to have Cemani and it was so dark that I thought it was cursed since birth and I dont even want going close to that.

    When I used to raise and look after my chickens I always include a few Silkies as they have very strong nesting instincts. They will nest on all the eggs to help them hatch. They are so cute too.

    One of the reasons these are called 'soup chickens' is because there isn't as much meat on them as most domestic chickens (even the non-US chickens). So, they instead used them for soup stock and chicken broth instead.
    You can see it at 0:41. That bottom layer are legs and thighs, but you can barely tell which is which based solely on how meaty they are. The right side? the breast bone with both chicken breasts still attached.
    Silky chickens are downright boney compared to their cousins.

    I feel like he wasted the black chicken. He just fried it like a regular chicken without even knowing what it tastes like. Using spices and a method that's meant to combine with the taste of regular chicken just doesn't work for something that tastes different in the first place, you're doing a disservice to the ingredient that way.

    I am a Chinese in Malaysia. The silky chicken is quite normal for Chinese here. Normally used to boil herbal soup and I personally love the taste. It taste totally different from a normal chicken when it is used to boil soup.

      I prefer them over the regular corn tortilla chips. The blue corn chips have a better flavor. Given they do much of their shopping at Publix and Publix even sells their own chips I'm guessing Angel doesn't do grocery shopping.

    They make cool looking eggs too. Smaller, but cool colors. Usually blue shells. And the fluffy goobers are more chill than the typical meat or egg breeds.

      No, as on the Sous Vide channel, they did not deep fry the chicken, but rather cooked it on the bbq after sous vide.

    In Korea, this is called Ogolgye which means black bone chicken. It has a very chewy texture compared to regular chicken. Some chefs in Korea have tried deepfrying it, but the chewy texture became very tough, so it is not as tasty as regular chicken, they said. However, its unique texture shines when boiled in water. There is no unusual smell in the meat, so there is no unpleasant smell in the broth, too.

    As an American born Chinese grown-up here in America, that chicken was a rare, but at the same time my grandma would always make black chicken soup commonly. you usually only find it in Chinatown, which is where you would buy it.😊

    We call it Cemani Chicken. And in Indonesia, mostly we use this chicken as an offerings to do a black magic to hurt or until killing someone. That's how this chicken is expensive in here...

    They are readily available at Asian supermarkets in big US cities. Asian cook black chicken with herbs for broth. I've never imagined any other way of cooking them. That's interesting.

    I've had that chicken many times while living in China. When I was working there it was very common and not expensive. It's almost always used in soups, I've rarely ever seen it cooked in other ways, and I know for sure I've never seen anyone deep fry it. This is probably in part because it tends to be lean and not juicy at all.

    You guys should do regular guga steak. But in one, you season as normal. In the second, you season with garlic AFTER cooking (and onion powder too, trust me)

    In Thailand we separate chickens into farmed one and house one. As I have had the black chicken, I think the fact that it's not a farmed chicken is the case here.
    Farmed chicken has much more meat and it's tender and more fat. House chicken on the other hand is more lean and a little bit on the chewy side. And the black chicken has the same texture as the house chicken.
    Most of the time I see only two popular ways of cooking house chicken.
    One is slow cook in a soup which makes its texture perfect with a little bit of chewy/al dente kinda feel while it absorb the soup flavors which unlike the farmed chicken that became like paper, house chicken will got juices between its muscle grain. Also the skin usually sticks with the meat giving more depth to the texture. I think this is also the case why the black chicken is also called soup chicken. You go to a Chinese store and tell them you're gonna make the chicken soup and they should know which combination of spice for it, throw the whole chicken in with the spices and that becomes the luxurious Chinese chicken soup for health.
    The other way to cook the house chicken is to fry. But not with batter. Cut them into the biteable pieces. Then just massage the chicken with salt. I think probably any of your dry rubs would work well too. rest open in the fridge for at least about half an hour or maybe under the sun, The trick is to make it a little bit dry. Then deep fry to golden brown. You don't need batter to get in the way. The skin and the meat will be crispy and full of flavor inside. Since it's a thinner piece, the salt will go deep into it and the moisture will evaporate out easier too, which make it crispy.

    I think you need to revisit the black chicken and try a different way of cooking them, get the boys to change their minds. Growing up we raised a bunch of fowl and sometimes we had silkies too. We live in the states too, we got them from amish farmers in southern Maryland, so I'm kind of surprised that you say they are so rare because they seemed very accessible to us. I can't remember exactly the way we prepared them back then it was so long ago but I remember them being very tender and delicious compared to our other chickens.
    As a child i was opposed to eating them because I adored them like pets, silkies look really awesome afterall. but my father tricked me into eating some lol, maybe a bit messed up depending on your perspective, but it wasn't a big deal I wasn't hurt about it, more so surprised how delicious it was

    Chinese cuisine we use Black Chicken for soups only because it’s tender even after boiling in water for the broth. There’s a reason why they don’t deep fried the black chicken.
