    (Serves 4)
    - Spinach Leaves (chopped)
    - 1 cup Fenugreek Leaves
    - 1/2 tsp Red Chilli Powder
    - 1/4 tsp Turmeric Powder
    - 1/4 tsp Garam Masala Powder
    - 1 cup Water
    - Salt
    - 3 tbsp Gram Flour
    - Water
    - 3 tbsp Ghee
    - 10 Garlic Cloves (crushed)
    - 1 tsp Cumin Seeds
    - 1/4 tsp Asafoetida

    This with tandoori roti is India's culinary gift to the world. Perfect recipe, though jeera should have been added first in the tadka and garlic may be crushed with a green chilli. The latter does some molecular chemistry with the asafoetida in the ghee.

    It can’t be this easy to make saag! One of my favorite Indian dishes, idk why I never thought to make it... nope I remember I thought it was labor intensive lol. I am definitely going to make this. Looks so yummy 😋 Thank You!

      All the mums, mums in law, anunties, granny's, Nani's always make such a big deal about the process of making saag that it put me off. However as an adult using mod cons I managed saag in 2 hours. Lol

    Nice and quick recipe... But in North india it is never cooked in cooker .... This process is done in an open vessel by covering with simple plate on low flame..
    And I am a big big fan of yours..

    Nice.. We Sindhi's make this type of saag with chene (haree boot) or green chana ka sag.. We add little chaas in it..insted of water.. Then give same tadka.

    I LOVE this recipe! It’s my new favourite. I altered it slightly though. Added coriander leaves instead of methi cause I don’t get methi leaves easily here. Was still delicious.

    Never saw a saag recipe without onions! With the use of besan, this seems more like the 'methi aalan' recipe from Maharashtra. Looks promising though. :)

    Hello! This recipe looks tasty! Could you please tell me exactly how much spinach you used? Also I don't have a pressure cooker, would that make a big difference if I use a normal pot instead? Thank you!

      Greens tend to reduce when boiled/sauteed. So you can use a handful of spinach per person. You need to use a thick bottom pan with a lid (instead of a cooker) to reduce the greens.

      I made the Palak Ka Saag in an Instant Pot. I used 10 oz baby spinach, 4 blocks of frozen Methi (a little less than 200 grams total). High pressure for 12 minutes, with natural release. Turned out very nicely. I also crushed 1 green chili with the garlic, which I liked (I'd probably crush 2 next time). Very good recipe.

      According to Vah Chef, in his Sarson Ka Saag recipe, pressure cooking retains volatile compounds that makes it 'too green' - so he recommends *not* using a pressure cooker, to make the final product less green....
