I imagine that the feet and hands of Sonic's characters are accurate to the paws of the real life animals that each one is. Hedgehogs like, Sonic, Shadow, Silver and Amy have paws of real life hedgehogs for example. I think it would be very uncanny if they had humanized hands, so I like to think of it that way.
