This brew makes perfect sense. I guess depend on Your coffee You can go more coarse for acidity or more fine for sweetness. Since temperature is high I believe that lightly roasted beans will work.
Not much a reason for precise 98°c for me but, if the coffee bean is light roasted you must brew the coffee near almost boiling point mean 98°c or just as tthe water boiled mean 100°c. By what i read and research around the internet. So yeah 98°c is fine.😅idk tho

Why do you use two filters?
I use paper filter for clean and clear beverage.
@@aryanjoshani4039 the purpose of the mesh filter is for a heavier brew that has more oils in it, the paper cancels that out 🤷♂️
