Grilled Mango with Chilli Honey

  • Charred mango with hot honey and a simple salad. An easy yet flavourful summer lunch just right for a Christmas for One or forget the salad and serve with ice-cream. Scale it up to serve as many people as you want! 1 mango per person.
    GRILLED HONEY MANGO
    1 mango (or 1 per person if making for multiple people)
    2 tbsp honey
    1/2 - 1 tsp chilli flakes
    Salad - quantities as desired.
    -use seasonal salad vegetables and herbs of choice. The following is what I had fresh in the garden.
    beetroot leaves
    cherry tomatoes
    shallots
    fresh basil
    fresh mint
    bocconcini
    OR
    serve with ice-cream to make into a dessert
    Make the Chilli Honey
    Mix honey and chilli flakes in a microwave safe bowl.
    Heat in the microwave for 10 - 15 seconds.
    Allow the warm chilli honey to sit for at least 15 minutes.
    Cut the cheeks off the mangos.
    Cut diagonal slices in the flesh side of the mango.
    Brush a small amount of oil onto the flesh side of the mango.
    Heat the grill to medium high then brush on some olive oil.
    Place mango, flesh side down, onto the hot grill for a few minutes until grill marks appear.
    Reposition the mango on the grill to create a crosshatch char on the flesh side of the mango.
    Turn the mango over and continue to cook for 2 - 3 minutes.
    Remove from the heat and serve with either a salad or ice cream and drizzle with the chilli honey.
    Best served warm.
