Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. Thanks to the great natural environment of Yunnan, you can taste the summer sunshine even in the lotus roots.

In China, we never related rain to fried food, I dont get it why korean want fried food in raining day at first, but I get it one day, it is because the sound of raining is similar to the fried sound. Haha. Interesting.
It's amazing how we share cultures no matter the race. In Nigeria this is the same method we use to make corn flour which we use for pap just like they do. This is beautiful.

American here too. In the 1980s I started watching Chinese movies and the plot turns blew my tiny Western mind. Just like some of these recipes. Just when I think I know where a recipe is going, there's a twist. "OK, stuff the root with glutinous rice. Steam it. Slice it. OK. AND THEN FRY IT!" Didn't see that coming, but makes total sense. Another layer of texture. I've learned so much from Dianxi.

I have never heard neither knew that lotus roots are edible but after I watched this video, I came to know that it's a fantastic dish and apparently a healthy diet. Wonderful video.
In China we eat it all the time, there is a common dishes I have been eating since I was little, make me feel very nostalgic, is that people put a sticky rice inside a whole of the lotus root, and baked with brown sugar water so it taste sweet. As an appetite before dinner
Sri Lankan people also eating lotus roots. It's very delicious.

Lotus roots is very delicious and has unique taste to them so can't really describe. One of my co-worker a few years ago tried lotus roots for the first time not knowing what it was and now she loves it so much. lol PS: My favorite way to eat lotus roots is in the soup that she made pork ribs. It really changes the broth and the lotus roots taste tender. :)
I think the texture is even more unique. The one in the broth would have similar "crunch-soft" feel like milk chocolate has
