Beginners make sure that you melt the sugar on very low heat, and remove from heat as soon as the syrup turns golden brown. Cooking on high flame or for too long makes the caramel bitter in taste.
Also both kheer and caramel needs to be hot while mixing, or the syrup will harden up and won't mix up with kheer.

One of the best payasam I have ever prepared !! It turned out to be super creamy and tasty. A must try recipe... just make sure not to overcook the caramel as it will taste bitter..
