    Congratulations man on the baby! My wife and I had our first who is almost 4 months old now, what a blast…you’ll need that coffee :)

    I also have an 078s and largely agree with your findings. After several months of use my cons include: dosing cup (large amount of grounds sticking vs my niche cup which has minimal to none), hopper (beans stick with rdt and angle seems to shallow, does create way more mess vs niche), grind adjustment (incredibly hard to see the numbers and each small line makes a pretty large change) shot inconsistency (initially wildly different shot times at same grind and very hard to dial in (after 3 or so kg has improved and seems to get better by the day). My pros: noise (very quiet albeit higher pitched than niche), fines collector (satisfying and effective), looks/build quality (feels sturdy and no blemishes after several months of use) burrs( coming from the niche I am losing body and less sweet spot for tasty shots, but much cleaner, brighter cups without being astringent)

      Thanks so much for your input. I think alot of the comparison you have mentioned might have more to do as a conical v flat burr comparison. Bit all said, yes I would agree. 🙏

    Nice video! I also have the 78s, and I disagree with you about the auto-off being too long. Personally, I think the auto-off feature is too short. I'm usually grinding 35-40g beans at a time, and I'm trying to slow-feed, and I almost always have to restart the grinder mid grinding because it stops too early. This happens even when grinding at the coarsest setting for filter. Maybe they'll include a variable auto-off control in a future version.
    Also, I found that the grinding area is fairly messy, but by using RDT, I am able to reduce the mess a lot. Without RDT, there's a lot more fines spraying everywhere.

      Ah, interesting. Have you found the slow feed is worth the extra effort?

    • @spynightrider
      @spynightrider Před 4 měsíci +2

      @@mitchdoescoffee well, honestly I haven't done any side-by-side comparison yet. I'm just slow-feeding by default based on the Lance vids, but I'm planning to try a side-by-side comparison this weekend.

    Nice review! I also received a 078s recently and agree with all the negatives you listed, and most of the positives. I can't say this grinder is very consistent and I do get significantly different shot times in back to back shots, especially if I'm slow feeding the beans, as some recommend. Do you slow feed or dump the beans in one go? Have you tried cold starting the grinder with the beans already in? I think it's both cleaner and more consistent.
    I'm also curious to hear how you use the RPM control. I couldn't find any official recommendations from Timemore nor explicit conclusions or tips in reviews. I'm playing with it, but other than extending the shot times with lower RPM (which can be compensated with a coarser grind setting) I can't say I have any takeaways about it.

    • @mitchdoescoffee
      @mitchdoescoffee  Před 4 měsíci +1

      That's very interesting. I always hot start & dump.
      My rule of thumb (obviously experiment with your beans & flavour preference) 1000rpm is my default for any coffee regardless of brewing method and adjust to perfect... 1000rpm is the "crossover" for espresso & filter. And with so many new experiments happening behind the scenes these days, I would hate to stick to the old rules that might not suit the new school roasters.

    I'm saving this video for later, but reading the comments and after using it for 4 months, I think it agrees with all my cons: hopper, grind adjustment and inconsistency. I still cant pull decent shots with it, it baries widely even without changing the dial (from a 10 seconds shot to choking the machine without changing the dial).

    • @mitchdoescoffee
      @mitchdoescoffee  Před 4 měsíci +1

      How many kg have you put through it? I found mine wasn't super consistent until about 3kg (and still improved) some people reported it took 7kg until it was well seasoned.

    • @rever6612
      @rever6612 Před 4 měsíci +1

      @@mitchdoescoffee After writing the previous comment I decided to give it another chance and I was surprised that I'm getting repeatable shots at 3.4 with my current coffee. I used 1.5kg of bad coffee when I got it to season it a bit and I might spend around 1kg per month at setting ~15 for filter, so It has grinded around 5kg aprox.
      After those decents shots I have decided to start modding it with a helper for the knocker and a better dial indicator and I'm planning on printing a better hopper, because that's one of the things I have most about it.
      EDIT: oh, something that might be important, I started to slow feed it after whatching the video that Lance Hedrick released recently.

      @rever6612 yes, the hopper definitely needs some love. I spotted a few nice downloadable 3D print designs online. 👍

    Picked one up unopened on FB Marketplace for $1000 and timemore confirmed they will honour the warranty. I think it's a fantastic piece of kit. Have noticed a little inconsistency in shots but I'm only 300g in, but liking the taste and expecting that to improve. I'm coming from an inbuilt Breville grinder that I was very accustomed to and made great shots. Thanks for the honest review.

    How did you not mention the crazy amount of seasoning this grinder requires???

    • @mitchdoescoffee
      @mitchdoescoffee  Před 4 měsíci +1

      I feel like there are some discrepancies in seasoning... mine only took about 2kg for it to become nice & consistent. Where some others have claimed 7kg 🫠

    I've got a 064s and much of the cons and pros are the same. It does however (auto) turn off after only 60 seconds. I've come from a gen 1 DF64 and the Sculptor has much lower retention and I prefer the 064s in both taste and workflow, so I sold the DF64. Smaller motor has not been a problem for me - I run it just at ~900rpm and hot start and it is fine, even with quite light coffee. Also filter brewing is much better than the DF64 - much less fines, so far less astringency.

    I've liked my 078s a lot. I don't have experience with other flat burrs, I only have this and a kingrinder k6.

      It's definitely my favourite grinder in the price range. I feel like there will/should be a v2 in the near future to fix a couple of little issues.

    So I take it this is quieter than the Cuisinart DBM-8.

      Apollo 13 taking off was quieter than the Cuisinart. 😅
      Yes... it's extremely quiet.

    • @fredbloggs6080
      @fredbloggs6080 Před 2 měsíci

      @@mitchdoescoffee I know, I have had several of the Cuisinart grinders over the last seven years or so. The newer ones in the last couple years, I think they changed the motor and they're quieter but they don't catch all the beans with the extended time, and the coffee doesn't come out as good. I'm still using one of the older ones and It was so loud at one point I put a doubled bath towel over it to muffle the sound, but I got tired of that after a while. But it seems to have gotten a lot quieter lately. Looking for one as a back up I bought two with the previous model number from eBay but they seem to have the newer quieter but less effective motor, so it may not have tracked exactly with it model number change from DBM-8 to DBM-8P1. I just bought one more from eBay after asking and verifying that she has had it for at least several years, and she said she's had it for four or five years. That one is even louder than I remember, and without beans, the loudness (like a loud vacuum cleaner), along with the vibration, I thought it was going to explode, but after a few uses it got a little quieter and smoother. I'm still not sure how well it grinds. One other from a few years ago, like this one I just got from eBay but maybe with the weaker motor, I returned because the hopper seemed rather loose, only held in place by the clicks but still with a little back-and-forth play. Others, or may after use for some reason, you can't hear or feel the clicks very much and they have more resistance to turning and are more like a continuous setting dial. But when they work right they produce a really good coffee grind, the problem is they can all of a sudden not be consistent and need a lot of experimentation to find the right grind with the same beans and brew set up--I have usually found the solution to be to go finer.
      Anyway, the moral of the story is about nine days ago I preordered the Timemore Sculptor 078 (for filter coffee). When I ordered it on April 20 they said it would ship around May 20. I look at their webpage now and if you order now it says it ships a month later. I hope that's for new orders, not that my ship date has been pushed back.
