    I agree, sashimi is super easy to prepare. It is so much more affordable to eat at home. Instead of a few slices at a sushi restaurant, you can have a whole platter full. A pound of sashimi anyone?

      As long as you can get sushi-grade fish. That's not even cheap at the supermarket.

      @@911SuzieQ - In the past, I used to go fishing out of San Diego and catch the fish myself. Over the years, I've caught bluefin, albacore, bigeye, yellowfin, yellowtail and a few others. Now that I can no longer fish, my favorite place to purchase fish is Dry Dock Fish Co. located in Anaheim California. They also sell at many farmers markets throughout Southern California. We also have a number of Japanese (Marukai, Tokyo Central, Mitsuwa, Nijiya) and Korean (H Mart) supermarkets and other fishmongers that sell sashimi grade fish.
      If you're not in the Southern California area, try doing a yelp search. Type "sashimi grade fish market" in the find box and see what comes up. Another option is to do an Internet search. There are a number of companies that will ship it to you. Unfortunately, the Internet option may be the most expensive. Dry Dock Fish Co. will also ship and their prices are reasonable. However, I believe their shipping area is limited; maybe to Southern California only.

    Unfortunately it’s hard to find fish that’s quality enough for sashimi at most stores.

      I agree, that's probably the most challenging part. Once I stopped fishing, it took me a very long time to find a good fishmonger with the quality and price that I liked. If you live in a decent size city, check yelp, look for a fishmonger - someone who specializes in seafood. That's your best bet. The other option is to purchase it over the Internet and have it shipped to you.

    I had sashimi in a restaurant yesterday, and it was so weird. In this video it looks so good, but that what I got in the restaurant was served with a giant lettuce leave and a mountain of parsley. The taste didn't fit at all and for a normal sized meal it was not enough, it was only 4 thin pieces 😕.
    I guess I don't go there again, but I might try to do it at home it looks so easy, I don't even need to cook anything😅.

    it's terribely hard to find yellowtail in here...so sad, i wish i can get all the ingredient, so my sashimi will be great

    I have bought some sashimi grade tuna and salmon from the market. But if they are not eaten on the same day, can they be frozen for a few days? How do you then treat frozen fish and prepare for sashimi?

      Frozen fish won't be as nice. It alters the texture and makes it mushy

    Is there any difference in sushi grade and sashimi grade? My local butcher has sushi grade fish

      JenaWade Swanda Hi. I’m not an expert, from my understanding Sushi is served on top of rice. Sashimi is without the rice. So, I understand that sushi grade and sashimi grade would be the same thing. Again this is just My understanding. I’d as your butcher just to be sure though. :)

    I love sashimi but dare not make it at home. Super fresh fish like salmon (imported fish) is not really super fresh once it reaches my country. Like you said, better be safe than sorry.

    You didn't prepare the fish with mirin and rice vinegar? I live in the Mediterranean so sashimi grade fish is everywhere, but i was told by a Japanese chef at a local restaurant that i should always prepare the fish with mirin and rice vinegar before eating it so its never completely 'raw' but slightly cooked with the vinegar and mirin... was he pulling my leg?

      Only certain fish are prepared with vinegar, usually oily silver-skinned fish like shad or mackerel. We call them hikarimono, and many of them are best lightly pickled/vinegar cured.

    I have been waiting for this video . But I’m still scared to make at home .. what if the store
    Says it’s sashimi grade but they lie to me .. Salmonella

      I learned a lot of tricks from some friends at the sushi restaurant next to where I work. They actually helped me improve my rice skills, so - I was stupid happy about that. You could stick to just making California Rolls until you're feeling confident enough to try store brand sashimi. It's not restaurant grade, but it gets the job done. Soooo~!
      Tuna should be pink/bright red (Fatty Tuna has a deep rose color, but it's red none-the-less). Never grey/brown/green.
      Salmon is a little trickier because farmed salmon corporations use a coloring process to enhance the 'orange' color of their fish. Whereas wild salmon has red/orange hues. The easiest way to tell if salmon has gone bad? Is to see if there is a /milky/ slime forming around or on the fish. If there is? Throw it out/don't buy it.
      If you poke it and it retains its shape? You're good.
      Don't buy pre-sliced sashimi, it starts aging the moment you cut into it.
      If you're standing, and you can smell (a small block of it) at waist level? Don't eat it.
      Just make sure you use what you buy within 24hrs. Good luck to you!

      @@Mike_Dubo I'm sure it would be fine, since if you're not living right next to a fish market it comes in a box and on ice/frozen. Like... I believe Tuna, yellowtail, and salmon have to be frozen for up to 7 days to kill the parasites? I'm not sure...but it's just the same general rule of thumb though - if it smells bad? Toss it. If it looks like its leaking milky slim? Toss it because I'm sure it smells terrible too. xD

    You are a wonderful cook but your sharps safety hurts my soul.
    Never cut twards yourself, use a kevlar glove with a mandolin slicer.
    Stiches are never a good diner guest.

      Her knife techniques in this video are correct. This is the way Japanese slice sashimi. It allows for more precise control. Done correctly, it is very safe.
