    In case anyone is curious, I've had gold leaf before. It doesn't really taste like much on its own, and doesn't really add much other than the fancy feeling of eating gold. So it's more for show than anything else.

      It's a cop-out move by a chef/restaurant to add more value to a food than what it's meant to be.
      I always raise my eyebrows when I see any restaurant adding gold leaf. All they want is for you to spend money.

      It is still overpriced.
      If you think about it, you have to feed your entire family for just few days with this amount of money you get from grocery.
      Imagine eating everyday these...
      You would need 7500$ per month paying to eat them.
      Grocery and monthly foods is cheaper.

    When I serve at my restaurant, I also move my hands in a manner of always "presenting" the food as if it's extremely delicate. It's a great way of showing attention and care to the food and offering professional service. This sushi chef also meticulously moves his hands in a manner that also shows his care and professionalism for the food and customers. It's nice

    I love saba so much. Freshly pickled saba is so delicious.
    I like the tasting progression from the regular bluefin, to chu-toro (slightly fattier cut of bluefin), to oh-toro (fattiest part of the bluefin tuna belly). I bet it really highlights the differences.
    Also, the entire meal progresses from the lighter, more delicate types of sushi to the heaviest, most intense and complex flavors.

    Absolutely lovely. I was skeptical...not gonna lie. I’ve been to Omakase and it just wasn’t worth the price to me, as I can get just as good sushi and sashimi at less than half the price and more food overall. But this restaurant knows how to do Omakase! They definitely had beautiful fish...great presentation and a substantial amount of food for each patron. And the atmosphere was lovely.
    My mouth was watering 🤤 through the entire video, as the selection they served were all my favorites. I was especially jealous when you were served the gunkan w/the tuna tartare. 😋
    And I’ve never gotten soup, sides or dessert with Omakase! It always just ends with tamago sushi.

      You should look for a Korean place with kimbap.
      My husband isn't into raw seafood and well kimbap is usually or mostly all cooked foods in sesame oil seasoned rice. But served in big rolls.
      So when we do sushi nights I season rice half with vinegar and half with toasted sesame oil and make both kinds.
      A nice strip of ham and even cheese with spinach and cooked carrot and even egg omelet with a strip of pickled radish. Very yummy but a tiny bit easier to enjoy until you get your sushi sea legs. 🥰

    I'd say the price/costs/service was worth every penny. More than you'd get at a sushiro conveyor belt meaning condiments. Gold leaf, caviar x2 types etc...

      From an American perspective, $250 is a bargain for this kind of meal. This is an extremely high-end dining experience with a personal chef and a wide array of extremely fresh, expensive, and carefully curated ingredients. The bluefin tunas alone (including the chu-toro and oh-toro) would run you close to $80 per person in the United States.

      If you ever get a chance to eat some real bluefin tuna, I recommend it. There are successful captive-bred sources now (it's endangered in the wild), and it's a very delicate, delicious fish (which is why it's overfished in the wild).

    $250 isn’t bad at all.
    I’ve tried my hand at making sushi. Can make the rice, cut the fish and place in on top of rice? Sure but it’s usually a mess by the time I’m done, I’ve wasted some of the fish, the proportions aren’t right and I’m really frustrated that it doesn’t look elegant. The level these chefs work at is unreal.
    The look on her face at 17:08 and 18:30 is awesome! I’ve had that some look eating sushi!

      Sushi rice is suprisingly difficult to perfect! Also the whole point of high end sushi is choosing fresh and best cuts of fish so ofc normal supermarket fish won't do :')

      I think what you should do is pick one kind of sushi and perfect your technique. Just focus on this one, and find your own way to make it look 'elegant', or however you want it to look.
      You can't compare yourself to an expert that works in these restaurants, if you're not willing to pursue their level of expertise and excellence in at least ONE kind of sushi. They are good because they want to be good, and they do it hundreds of times or thousands of times. This isn't Play-Doh time with the kids -- you want to make a finely crafted meal, and that doesn't happen by accident... it happens by clear thinking and stubborn determination.

      Take heart that these chefs have probably been diligently practicing their knife skills and hand dexterity to do this for a minimum of 10 years. Usually that's how long it takes to be recognized as a master of the art and it's rare for someone less than mastery level to be doing omakase. But the fact that you've given it a try yourself is really respectable too! I love trying my hand at anything and getting that increased respect for the skill of an expert. I'm not sure if you're into manga at all, but if you can find it, there's a vintage manga called Souta no Houcho, or Sota's Knife, that follows a young chef learning the ropes in hopes of saving his father's closed down restaurant and he stays up every night just peeling daikon with his knife to practice doing delicate work.

    Sheesh, these upload schedules are starting to get unpredictable, either it is released very early in the morning, very late at night, or during the afternoon. Glad I stayed awake for this one especially since it’s sushi related.
    Now, on the topic of the video, Chef Ivan looks and cut the fishes so professional despite looking very young! Sea urchin or Uni is definitely something people should try at least once, it’s actually very creamy and tastes very exquisite!

      Only if you get good uni. I have had bad uni and if someone tries it for the first time and gets bad uni it’s enough to turn them off from ever trying it again. It has an ammonia taste and is extremely yucky! LoL ✌🏻😊

I lack respect for master chefs because that title allows them to be some serious jerks and always prevent the sous chefs from being creative and learning more to be great chefs themselves. Being a retired sous chef myself I can say that the industry is just as toxic as the tech world.

    At first I was wondering why you were wearing gloves, then realized you had a server next to you! That looked amazing! At $250.00 for 2 people, I think it was an excellent meal! In USA, probably would have been $250.00 each!

      This meal was GREAT value for the money. I’ve had much less sushi, but of good quality, no dessert or Chawan mushi, no miso soup, for the same price. This was an amazing meal. Very high quality! I’d even fly to Malaysia from Tokyo to try it someday!

    so omakase is the sushi version of teppanyaki, except you use a torch instead of a grill. 🔥🍣

      Basically "omakase" means "chef's choice". So omakase sushi listed on a menu means "a selection of sushi that the chef has chosen". Typically it will be whatever the chef has decided is particularly good that day, based on the day's catch and food availability. I guess it makes sense when the menu consists largely of seafood, which will vary from day to day depending on what the fishing boats catch.

    If you are getting truffles and caviar, $250 is cheap.
    Why are you the only customers at the table? Is this a sponsored video? Over here these Omakase places are book solid for months and all sold out within hours of reservations being available.

      I was genuinely surprised by the truffle. I don't think I've ever been to a restaurant that actually used real truffle in anything. That's how expensive it is.
      As for the empty restaurant, this may be an odd time of day when there aren't a lot of customers. Also, it's a very expensive meal, especially by local standards, so it won't be crammed with people. AFAIK, Dancing Bacons doesn't do sponsorships.

      Not how good Omakase restaurants work. They don't sit people as they come. It's all pre-scheduled. You abide by their rules, their menu choice, their price. And you pay with a smile and thankful that the chef fed you. That's the Japanese costume. LOL

    I have been eating sushi longer than most of you have been alive. That is not bragging. It is a statement to honor all of the Master Chefs whose skills are so appreciated. In addition, I am lauding each of you who shares such appreciation. There is no finer dining experience than that which is found in a genuine Shushi Restaurant.
