    *Curing mix:
    1 teaspoon salt
    1 teaspoon sugar
    1/2 teaspoon lemon zest
    1/2 teaspoon chopped dill
    *To finish:
    15g shallots, finely minced
    1/4 teaspoon dijon mustard
    1/2 teaspoon extra virgin olive oil
    1/2 teaspoon lemon juice
    A pinch of smoked paprika
    Pepper to taste
    CREME FRAICHE
    50g creme fraiche
    Salt and pepper to taste
    TART SHELL
    Spring roll wrappers
    Water
    Vegetable oil
    SALMON ROE OR RED CAVIAR
    DILL FOR GARNISH

    *Để làm tartare:
    15g hĂ nh tĂ­m, băm nhuyễn
    1/4 muỗng tea mĂč táșĄt dijon
    1/2 muỗng tea dáș§u ĂŽliu
    1/2 muỗng tea nước cốt chanh
    1 nhĂșm bột ớt paprika

    Looks great, but a couple of notes. Treat your salmon better, more precise knife cuts with it will lead to a more silky texture
