    Ingredients:
    2 Basa fillets (or tilapia), about 1 pound, cut into thin slices
    2 lettuce leaves, broke into pieces
    1 tablespoon corn starch
    1/2 teaspoon salt
    1/4 teaspoon white pepper powder
    1 teaspoon Chinese cooking wine
    4 tablespoon canola oil
    8 dried chili pepper
    1 teaspoon Sichuan pepper corn
    4 gloves garlic, minced
    1 tablespoon minces ginger
    2 scallions, chopped
    1 tablespoon spicy bean paste
    1 teaspoon chili powder
    1 teaspoon sugar
    1/2 cinnamon stick
    1 star aniseed
    1 cup chicken stock
    1 cup water

    Thanks, we made it last night following your base recipe and adding powdered cod as well. My wife and I thought it was among the best dishes we've ever made at home. I think you're right in that I don't believe it matters much if water/chicken/fish stock is used and is perhaps just personal preference or whichever happens to be handy at the time. We experimented by adding more stock for a more soupy consistency as well as throwing in napa cabbage then finished it with cilantro for freshness.

    I tried this recipe today and it turned out awesome! I had lots of veggies (not just lettuce).I used 1 tablespoon Lao Gan Ma because I don’t have Dou Ban Jan and sure it’s spicy 😋

    There’s a dish I buy in Eugene Oregon, that’s close that I want to recreate. The fish has a fried and breaded crust… maybe cornstarch and coconut flour…. Also has sauté celery in with the chilies and peppercorns… I don’t even like celery, but this dish is addictive. Gonna adapt this one! Thanks!

    Thank you for your videos--I believe you've helped demystify the preparation of Chinese for many. I've enjoyed cooking Asian cuisine for years and my passion has increased since my wife and I returned China recently. Regarding this recipe, I'm curious what your thoughts are on using a fish base instead of chicken stock? Or perhaps adding powdered cod seasoning to the chicken stock to intensify the seafood flavor component? I'm planning on following your recipe and will await your feedback.

    In a chinese restaurent I have tried "xingla fish fillet",which was a fried fish fillet with sichuan peppercorn,dry red chili n some vegetables.it was so spicy n tasty...could you plz make a video how to make that fish..

    It looks watery...you should have put some corn starch and made it thicker it will be more nice and it will coat the fish nicely more tasty then ....

    I have been looking for an easy recipe for this dish that is not covered in chili oil (although I do like that, but not healthy). I will definite give this a try! Thank you!. To the other viewer regarding not able to find Chinese cooking wine - I use brandy when I run out of Chinese cooking wine, just use less... :-)

    Thank you so much for sharing your recipe! Could you please let me know what I can use in place of cooking wine? I know you have said that we can skip it but so many Chinese dishes do use cooking wine often.

    Just made it today. The only change I made was I used non-spicy bean paste, and it was still very flavorful. The dish served around 3-4 people. You're welcome. ;)

    Ok,I made the chilli sauce, though I bought some pre-made dumplings ...which were ok, but there is a lot of chemicals and flavour which I really don't like,I have also bought some wrappers to make my own,(your dumplings) Later. which I know I will prefer. Chillie sauce, verdict...I see your version is deliberately not containing a bunch of other herbs or spices) or salt....my guess is that your source can always be used as a base for all your other dishes..? Then you may mix it with soy sauce or fish sauce? I used soy today , probably too much soy sauce, ​so my next attempt I will try to follow your recipe for a dish like the fish Sichuan Spicy fish to see how it all plays out looks good,
