    Are you ready for the BEST BIRRIA TACOS?! We hope that is a YES! Birria tacos have become the biggest trend in the United States in the last couple of years. But, the trendy birria in the United States is made with beef. We have always known to eat birria with goat. In this vlog, we visit Mercado Juarez in Aguascalientes, Mexico, the mercado known for shoes and birria, and we are out to find out why some Mexican states cook birria with beef and some with goat.
    In this video you give y’all tips as to how to pick a spot to eat birria in the overwhelming Mercado Juarez. We also eat birria at Lago Azul, a restaurant featured on the famous Netflix Series; Taco Chronicles. One of the reasons the Lago Azul stands out from the other birria locations is that the one the Taqueros is from the UK. Kevin, the british taquero, was born and raised in the UK and met his lovely wife Lorena in the UK. They both decided to move back to Lorena’s hometown of Aguascalientes to help run the family business.
    Lago Azul is a family business that has been running strong for 65 years. The secret to the best birria is the quality of goat meat. The original birria is made with goat meat and believe it or not it is way more nutritious than beef. Find out all this in this delicious food vlog!

    I always thought that birria was a way of cooking the meat - I didn’t know it was goat meat - now I can’t wait to try one 😃❤️👍

    First! Cool - I remember that Netflix episode. Interesting about the goat vs sheep vs lamb question. I remember that in Turkish there was one word that described meat from both animals, so you didn't really know. But whenever I had it, it was good.

      That's awesome, what is the name of where you tried it. We have some family in NC, we wonder if they have tried it too. The secret is all in the meat, in chicago there was a good spot we would go to but now we know it's difficult to go back and say the same.

    I am also not familiar with the differences between these types of meats like lamb, goat, sheep, ram, But I believe the owner said he serves ‘borregito’ which is probably lamb and maybe the reason why it’s so tender and tasty.
    On a side note, it’s nice to see that businesses are almost back and fully opened in Mexico, are most states that way? Since you guys travel to different states so much you’re probably experts in this 👍

      We left a little more Confused with the whole animal categorization but what we learned was that birria is originally with goat. But people make it with beef because it’s cheaper and easier to get. I’m California those quesabirrias became famous thanks to two Mexican Americans who’s stand was struggling they decided to make beef birria quesadillas and they became super popular through social media.

    My family is from Aguascalientes ags. Ive been going for years , the centro is like a 20 minute walk from where I stay. I’m around the area called La purísima.Have you all ever been to the Féria de San Marcos in Aguascalientes, if not you have to experience it , really nice time and good experience, it starts April 16-May 8 this year

      Oh yes La Purisima, I think we walked to that area we have not been to La Feria this was our first time in Aguas but we will definitely try to make it to La Feria someday. It wont be this year but hopefully next year.

    ¡Buen provecho! You guys taught me a lot about birria! :-) Jorge and I NOW HAVE A HOUSE IN QUERÉTARO!! YAY! He went down there last weekend and found a cool three-story home (four stories if you count the roof garden) for rent. Jorge signed a one-year lease on this “casa de autor” (custom-built home) in Zibatá. We will move in on December 12 (El día de la Virgen de Guadalupe). Buddy is going to love living in this house! All three of us will! ¡Saludos! :-) Pepe

    I didn’t know about this food, thanks for the detailed description. We don’t eat beef but we eat goat, so I will definitely try this next time, I hope I can find this here in Queretaro 😃

      You should be able to find some birria in Querétaro just make sure it’s made from goat because some businesses make it from beef to save money. If you’re ever in Aguascalientes don’t miss this spot.

    That was great! You offered so much information that I have to watch this again to take it all in. Nice job interviewing the Lago Azul team - it was very interesting to see a Brit taquero chopping away like a pro! I would love to know if he eats meat for breakfast now, like a true Mexican, or whether he still has tea and toast (like me) and saves the birria for lunch or dinner? (BTW, birria is huge in Jalisco - that might be why the team in Guadalajara is called Chivas).

      We loved eating birria twice a week. Every time we saw kevin (British taquero) eating he was eating birria so we wanna say he’s ditched the tea . 😂
      To our understanding birria is originally from Jalisco which neighbors Aguascalientes. According to the Netflix episode on Birria. the fútbol team of Atlas from Jalisco (Chivas rivals) sells the best birria before Atlas vs chivas games outside of the stadium.

    Acabo de regresar de Xalapa Veracruz, y ahi también sirven muy buenos tacos de borrego, les recomiendo se den una vuelta por alla hay mucha buena comida y a diferencia del norte de donde yo soy como lo comento el dueño pues la barbaoca por aca solo es de rez, ambas son buenas, pero si es como mas suave y tender la de borreguito,
