If you use good earbuds/headphones you can definitely hear a difference. Your voice sounds so much more open, full of range with the latter. But if you’re just a gamer or need something budget and don’t care about the high end and low end frequencies then the former works as well.

350 is much better. Clarity is much better, the quality is better, it also has more (usable) features and audio interfaces are great, so as a side product of having the mic you get MORE features.
I'm an audio engineer. I can tell you that the logitech mic sounded cleaner for sure, but there are definitely some better options for about the same price if not just a little more. Also the mic being XLR doesn't neccesarily mean anything, but it's a condensor mic that requires 48V phantom power. A cheap but good interface is the Focusrite Scarlett like he showed :)
The expensive one definitely sounds better. The background of your voice sounds deeper and more genuine. It doesn’t give that slight high pitched after tone, making it seem more like you are actually in the room of the audience talking instead of just talking into the mic. It’s definitely more enjoyable to listen to. The different isn’t drastic but it is definitely there in my opinion.
I feel like reason why it might be so much more expensive is a the quality is a bit better without any changes to the actual audio stuff, but where they really shine is the customized ability of being able to change audio levels and stuff like that to bring out the perfect audio levels, whereas you can't really do that with the lower priced microphones
