How To Make Sutlac / Turkish Rice Pudding

  • Turkish rice pudding Sutlaç is one of the most popular Milky Turkish desserts served in Turkish restaurants. There is a similar dessert called Umm Ali in Arabic countries. With cold creamy rice pudding and caramelized top it is perfect after a good meal. You can serve it plain or sprinkle ground cinnamon or chopped hazelnuts
    Ingredients For Sutlaç Rice Pudding: (About 8-10 servings)
    Little less than 1/2 cup white rice
    1+1/2 cups water
    1 liter whole milk + 1 cup more depend on the consistency
    1 cup sugar
    1+1/2 tbsp cornstarch
    vanilla sugar or vanilla beans or vanilla extract
    Oven safe serving bowls if you want to caramelize top

    Every country has a rice pudding, truly a global dish with just 2 ingredients with slight variations! I usually add Nutmeg and cinnamon instead of vanilla or cardamom!

      There are some variations of this kind of dessert in Turkey. One is this rice pudding but without owen.the other is 'muhallebi' without rice and we often put some cinnamon on it.

    We have the same in albania! We call it sultjash🥣 and we usually make it for eid!

    This is something I see every country in the world has with it's own variation.
    In Pakistan we call it " KHEER" & do not bake.
    Just with milk sugar rice & cardamom.
    To garnish with pistachio or almonds.
    Will definitely try this Turkish version insha a allah.

    I am German but as a child my mother always took me to a turkish cafeteria when we visited my dad at work. I allways had Pide and sutlac. It was and still is my favorite food- no schnitzel for me haha. We moved away and i have been desperately looking for recipes. This tastes exactly like the one i know…perhaps a little less sugar. The pide recipe is more difficult, but i had a huge success with a dough with baking powder instead of yeast. So yah for me it is the small homecook channels who often make the most authentic food, especially if you are looking for something international.

      @@johngalt4070 The Mexican equivalent isn't necessarily flan; which is made of just milk and sugar, such as the Flan Napolitano which the French introduced to Mexico. Instead this dish has more Mediterranean-Lavantine influence with the use of using rice (which came west by way of Middle-Eastern countries brought by the descendants of the Moors, as rice is not native to the Americas); when this dish came to Mexico it became know as Jericalla, one of the most loved dessert dishes in places such as Jalisco.

    In INDIA we call it FIRNI ...the only difference is we dont bake it but refrigerate after pouring into bowl.... I will try your way ,it looks delicious. 😍 lots of love from INDIA

      No firni .. is slightly different from kheer .. in kheer basic ingredients are rice n milk ,and garnish with dry fruits but firni is made by rice milk n dry fruits paste also ( means enough quantity of dry fruits ) also .. but yeah by India we can call it kheer

    Selam , nasılsiniz ☺ as lot of people have said this is called kheer, our version of kheer have cardimum ,almonds pistasho and coconut ... And we dont add corn starch ... Just milk, rice, sugar and cardmum with dry nuts 😍

    Hi , we have the same in Albania and call it sultjash, of course it’s a Turkish influence since we have a lot of things in common, food, traditions and worlds.
    But we don’t put it in the oven, just pour in bowls and let cool and then eat with cinnamon on top.
    I made your recipe even in the oven and really liked it a lot

    In the Philippines we have rice pudding also called champorado, but difference is its BROWN cuz its made of CHOCOLATE 🍫 its so good and usually eaten together with small dried fish as a snack, the sweetness complements the saltiness of dried fish

      As someone who was born in Turkey and consequently has eaten countless amounts of Sütlaç, I have to say that not every rice pudding is equal. British, for example, though scorch the milk just as Turks do, use milk with higher fat content and use thicker rice with more starch content. It's very palatable to me, probably because it tastes similar to fırın sütlaç, and they both have burned skin. French are -as per usual- confused about the whole ordeal and continue to confuse the rest of the world with being unable to decide on whether it should be prepared like a rice porridge (which is significantly thicker) or rice custard, with the usual custard base which involves egg yolks.
      The choice of flavoring indicates whether it is a posh dessert for gentry or a cold, sweet side dish for peasantry. In the case of latter, it is a non-choice; vanilla is expensive everywhere and the market is overflowing with fake stuff. How do I know? Because I went through all the hoops and trouble to get my hands on 'the good stuff', but all I can tell to convince you to spend your money on totally unnecessary and stupidly expensive flavoring like vanilla is that it is nothing like the bad stuff. I'm not a purist; I like cheap pre-grated parmesan and prefer it more often than the real stuff. Hell, I'm dumb, but not as dumb as pseudo-perfectionist French prunes.

Try Swedish rice porridge/pudding, (it is called risgrynsgröt or even tomtegröt or julgröt sometimes if you look for recipes). Get back to me when you have tried mate! You seem to know your rice puddings!

    I am based in London and have tried Sutlac once from a Turkish restaurant that had orange peel inside the sutlac which as so delicious. Some recipes add rosewater which some wouldn't prefer

      Yes you can flavor it as you wish surely. But traditionally we don’t flavor or use vanilla

      .Madam Jamila, Mohallabiyyah is another type of cooking milk but without rice.
      That is in my city Jerusalem.

      In Egypt we call it Ruz Blaban. meas the same: rice with milk, but we usually refrigerate it after adding yellow raisins to the top which makes it look great, the white and the golden colors. Egyptians love it very very much. In a hot day, it is just amazing. Some of the sweet shops here, add a ball of ice cream of your preference and it tastes delicious as well.

    My mother always added a small knob of butter to the pudding before inserting it the oven to ensure a beautiful dark, rich skin. We children always wanted the skin. Happy times. :)
