Luisa makes double ravioli with spinach and beetroot fillings! | Pasta Grannies

  • Luisa is a keen cook and passionate pasta maker and here she takes two traditional fillings and makes a modern recipe. She makes large quantities so here I have halved her amounts:
    For the pasta: 500g 00 flour, 5 eggs
    For the beetroot filling: 2 cooked medium beetroots, pureed with 25g butter, 25g hazelnuts (almonds are an alternative), 200g cows milk ricotta (drained), one egg yolk, 50g parmesan, salt and black pepper
    For the spinach filling: 150g cooked, squeezed dry, finely chopped spinach, 50g parmesan, lots of nutmeg, salt, one egg, 200g ricotta (drained)
    This is a fun weekend project! You can make them in advance and freeze on flat trays; cook them from frozen.

    Your channel keeps growing - so happy for you and the rest of the Pasta Grannies team! You need some sort of celebration when you hit 1 million subscribers! I've never seen this kind of ravioli, but now I want to try. Because of allergies mine will have to be eggless, but I'll try to make them tasty.

      hi Chris, don't worry they'll be delicious using a water based dough - I suggest a 50/50 mix of 00 and durum wheat flour. best wishes, Vicky

    What a different take this week with a pro making the pasta (not that the other ladies are not) in such large quantities. She even has her own measuring dowel! Nothing goes to waste and the color contrast is stunning. I can only imagine how delicious they are. Thanks, again, for a great episode!

    I love this channel, but, please don’t get offended, think the narration is annoying. It’s unnecessary, it could be left mostly with the original sound and subtitles. The narrator will say things like: “now she adds the past into the water” , “now she sprinkles cheese”, which is obvious and we can all see that.
