Pasta in Creamy Tandoori Sauce Written Recipe:
For boiling spaghetti
Ingredients:
• Weikfield spaghetti
• Water to boil
• Salt to taste
• Black pepper a pinch
Methods:
• Set water in a stock pot for boiling, add salt to taste, further add the spaghetti to the boiling water and cook for 10-12 minutes or al dente.
• Strain the excess water and allow it to cool down, you can also pass through running cold water to drop down the temperature and stop the overcooking process.
• Add little oil over the spaghetti and a pinch of black pepper powder, toss well so the oil coats well to avoid from sticking to each other. Keep aide for later use.
For tandoori spice mix
Ingredients:
• Kashmiri red chilli powder 2 tbsp
• Coriander powder 1 tbsp
• Black salt ½ tsp
• Jeera powder 1 tsp
• Amchur powder 1 tsp
• Garam masala ½ tsp
• Kasuri methi ½ tsp
Methods:
• In a mixing bowl, add all the powdered spices and mix well, keep aside for later use.
For pasta
Ingredients:
• Butter 3 tbsp
• Garlic 1 tbsp (sliced)
• Green chillies 1 tsp (chopped)
• Refined Flour 3 tbsp
• Milk 500 ml
• Tandoori spice mixes 1.5 tbsp
• Oregano 1 tsp
• Chilli flakes ½ tsp
• Boiled Weikfield spaghetti
• Salt to taste
• Cream 2 tbsp
• Cheese 50 gm (grated)
• Fresh coriander leaves 2 tsp (chopped)
• Fried garlic (for garnish)
• Fresh basil leaves (for garnish)
• Live charcoal + ghee
Methods:
• Set a pan on medium heat, add butter, green chillies and garlic, sauté it for a minute.
• Further, add refined flour, stir and cook on low flame for 2-3 minutes or until light golden in colour, further slowly & gradually add milk and whisk continuously, make sure it’s a lump free sauce. Cook the sauce for 2-3 minutes or until it starts to thicken slightly.
• Next add tandoori spice mix, oregano and chilli flakes, mix well and cook for 1-2 minutes.
• Next, add the boiled Weikfield spaghetti, salt to taste, cream and cheese, mix gently until cheese melts, you can increase or decrease the amount of cheese depending on your preference.
• Finish it with adding some freshly chopped coriander leaves, your creamy tandoori spaghetti is ready to be served, serve the spaghetti immediately or else the sauce may dry. Garnish it with some fresh basil leaves and fried garlic.
• Smoke the spaghetti while serving, by keeping a small piece of burning charcoal in a bowl and pour few drops of ghee, cover it with a cloche and smoke it briefly.

Pro tips: adding olive oil to pasta makes it more difficult for the sauce to mix with the pasta. Also add some pasta water to the the pasta, the technique is called Riss or are and results in a more luscious finish. Olive oil should be used as a garnish. Pepper should be added to the sauce to homogenize the flavors. Apart from this, looks great, can’t wait to test this one out!

Okay so hear me out and Give my version a try. No I'm not a chef but I make a bang on spaghetti (I think so).
1. Take a pan add olive oil and garlic. Saute until the garlic is slightly golden (don't burn it).
2. Add 4 tablespoon of pasta/pizza sauce (for one serving and I prefer homemade). At this point you can put your spaghetti in the boiling water.
3. After 5 min add cheese to the sauce (Be as generous as you want). I usually cut a cube of amul cheese and add it to the sauce but if you have slices, you can use them too. After 5 min the sauce will turn orange, if it's not then you are not generous enough with your cheese. If the mixture starts to get thick, take some of the water in which your spaghetti is boiling and put it in the sauce and cook this sauce for 20 min (Damn Important).
4. Drain your pasta after it's cooked, put your pasta in the sauce, add pepper, oregano, chilli flakes and give it a toss. You can add salt but the cheese will cover most of it.
5. Comment "Hallelujah" if it turns out great.

I tried this recipe. I normally dont cook items with maida but after watching this recipe, I thought of giving a try. It turned out to be super delicious!! I added some vegetables to it though. Coming from a professional chef, add in the salt before adding the pasta. The salt isn’t just to add seasoning. It also raises the temperature of the water. Also, don’t add in oil after cooking the pasta. I know that it tends to stick to itself but this way the noodles won’t catch on to the flavours properly. So try to have the sauce ready and drop the pasta in immediately after it’s done cooking. And even though this is a fusion dish, my Italian self died seeing this recipe. No offence or anything. Just that we usually stick to tradition. Lots of love from Italy.

Best best pasta ever! Just finished an entire bowl of it! The only different thing I did was, I added shahi paneer masala instead creating the spice mix
