I'm a PLC programmer. I spend a lot of time sitting on a bucket in a production facility with my laptop on my lap making changes to some code. I have a USB C monitor that I bring with me regularly so I can have the logic on one screen with the HMI (screen that controls the machine) on another. I wouldn't mind a 3rd screen as I sometimes need multiple HMIs open. I'm probably a good use-case for the FPOP setup

connecting to the TV takes about two seconds though and you only carry a HDMI cable with you, and no need for a USB hub, and no need for a multigang socket because only the laptop gets plugged to the wall.
Even on the go i wouldn't use that system, it's way too inconvenient. Ergonomics are also terrible. When you angle the main screen for a comfortable view, it tilts the other ones at weird angles. It only looks good in packaging photos.

I love the 3-screen idea as a programmer. I have 4 screens on my desktop, and when I go on vacation I plan to extend my vacation by working a few days from the apartment we're going to rent, and having 3-screens is a life saver, because I haven't ever coded on less than 3 screens for years now. Code on the middle, browser testing on the right, database or anything else on the left. Means I can bring my laptop for just personal stuff and netflix and when I decide to work remotely I just plug the screens in.
But I agree that it's a gimmick, or a very niche use case, because most people don't need it. And it takes quite a lot of room to take with you on a plane, so it might be annoying to take on a remote job where you have to fly too.

You might not know it, but the USB-Hub you've got there is mostly used for Smartphones as a Docking Station, since Smartphones often support a somewhat "hidden" Desktop-Mode which only enables if a proper Docking-Adapter is plugged in, so you can use the M.2 SSD as extended Storage, connect up to 2 USB-A Drives (or Mouse and Keyboard if you prefer), an additional USB-C Device, an HDMI Screen (for the Desktop-Mode) and an Ethernet Cable in case your WiFi is too slow (even with 5GHz Wifi, Ethernet will most likely outspeed it extremely), that's why the PC doesn't really get all the Performance off of the SSD (Phones don't need that much Read/Write Bandwidth from any connected Storage Expansions because they couldn't handle that much anyways)
