Epic Turkish Bean Stew | How to make Kuru Fasulye

- Kuru fasulye, Turkish white bean stew, is probably the most consumed dish in Turkey and is considered the national dish of Turkey. Today I'm making my favorite version which is a bit thicker than the usual recipe and has a more buttery and spicy flavor with sujuk, Turkish cured sausage. It's similar to Tavce Gravce, Macedonian or Balkan bean stew, but with a bit of Turkish twist.
Kuru fasulye means ‘dried beans’ and this recipe is traditionally made with dried white beans. Protein is also not a must have ingredient, so, if you’re vegan or vegetarian, just skip the meat.

Ingredients:
• 2 cups of white (navy) beans
• 1 onion
• 100 g tomatoes (grated)
• 3 green chilies
• 150 g sucuk - Turkish cured sausage (you may substitute for chorizo or other cured sausages)
• 1 tbsp chili paste
• 1 tbsp tomato paste
• 1 tsp sugar
• 2 tsp salt
• 1 tsp black pepper
• 2 tsp chili flakes
• 3 - 4 dried chili pepper
• 3 tbsp butter (extra 1 tbsp butter or clarified buter to garnish)

Interesting to learn your traditional dish and thank you....noted that boiling bean until the foam disappear could reduce the gas.👍

Looks delicious, I'm gonna try this one soon! Just one more question: When you say it's usually served with şehriye pilav and onions, what exactly do you mean by onions? Just raw onions or in a quick pickle with parsley, salt and sumac? I've also read that it is common to eat it with pickled vegetables like cucumbers. What do you think of that?
It might sound interesting but yes, raw onions. It's a very traditional and rustic way of enjoying kuru fasulye in Turkey. If you google "kuru fasulye ve sogan" you may see some photos of it.
Yes, pickled cucumbers are also commonly served with this, I love it! So, you dip your bread into the sauce, have a spoonful of the beans together with a slice of onion. It's a matter of taste of course, non Turkish people may find it weird :)

No salt needed in soaking beans makes them hard to boil!
Turkish sujuk was not fermented. unfortunately you used a heat-treated artificial sausage.
