Ingredients
Bread
3 -3 ½ cups all-purpose flour, divided (375 - 438g)
⅓ cup granulated sugar (66g)
1 ¼ teaspoon instant yeast
¾ teaspoon salt
2 eggs + 1 egg yolk, lightly beaten, room temperature preferred
½ cup milk, warmed to 100F (38C) (118ml)
1 ½ teaspoons vanilla extract
⅓ cup unsalted butter, softened to room temperature and cut into tablespoons (75g)
Chocolate Filling
8 oz 60% chocolate bar, finely chopped (227g)
⅓ cup unsalted butter (75g)
¼ cup heavy cream (60ml)
2 Tablespoons natural cocoa powder
½ cup powdered sugar (65g)
½ teaspoon vanilla extract
¼ teaspoon salt
Syrup
⅓ cup granulated sugar (66g)
¼ cup water (60ml)

I just wanted to say thank you so much for making a babka recipe without the stand mixer. so many youtube videos (or recipes etc) just say "use it" and it's hard to see what it is supposed to look like without it.

I just realized after reading another comment that your sons and soon to debut daughter are similar to myself and my two siblings in a sense. My brother was born first. I came along 50 weeks later 😬. We stayed that way until my sister was born four years later. Unlike your situation, this was before ultrasound, so none of us fellows knew that we were getting another female in the house right up until a few days before it happened. I do remember that my dad showed up at the house the night my sister was born with toy cars for both of us to break the news. I’m sure that it was a bit of a shock for us. However, my sister turned out pretty good and many decades later I can honestly say that I’m glad that we kept her. 😬 I hope you have a wonderful Sunday!

My babka dough is in the fridge right now. I can tell by the dough its gonna be great. Can you do a honey cake? I tried once from a recipe on Pinterest and it was garbage.

I watched another baker who said you should not pour salt on the yeast in the dry ingredients !! Put yeast on one side & salt on the other side of the bowl !! What do you think of this, or is it just a personal preference of the baker ??
It depends on this situation. Here you're totally fine to combine them as I do. I'm struggling to imagine how separating the yeast and salt in the bowl like that would even make sense since you mix them together anyway. If you add salt directly to yeast you're activating (so say adding it to just active dry yeast and a liquid)( it could definitely kill or at least inhibit your yeast. But the ratio here is too small to impact things negatively.

love this bread , so def will make this one , but i will not dump salt directly on yeast, thats a killer for yeast, i was taken back when i seen you do that... but it looks delish so ty for sharing your recipe with us , and i have to laugh when ive seen ur videos and u always show ur stand mixer in the back , but i cant recall you ever using it ....... poor stand mixer is so neglected .... and its such a game changer in the kitchen , i use mine all the time , and my sister got one for christmas , and she was like omg how did i go without this , so shes done a lot more baking since christmas.....lol
Combining the salt with the yeast here is totally fine, lots of people think that you can’t combine the two ever but you only have to worry about the salt killing the yeast in certain scenarios (for example, proofing active dry yeast with liquid and adding the salt there). So no worries 🙂
