    Very informative. I was sitting on my couch the other day and I just thought, out of nowhere, "What the heck is the difference between brown and white sugar? And what the heck is molasses, anyway?" Led me to this vid. Succinct, clear, to-the-point. Excellent.

    I've never had molasses in anything, and i'm almost 40 and grew up in Georgia. Every grandma in Georgia uses brown sugar to make sweets, I'm not even sure I've seen molasses in anyones pantry I know. There seems to be a lot of "they do X in the south" that just isnt true. I've been told people eat shrimp & grits in the south, i've seen that at restaurants that have "southern" food for yankkes, never, not once have I had shrimp and grits at someones house. Grits is a breakfast food, and you don't eat shrimp at 7am unless you're really drunk and haven't gone to bed yet.

    This video is exactly what i was looking for. I bought molasses for a recipe and was thinking... what is molasses? Looked at the ingredients list on my molasses jar and what do you know. It says: molasses. WELL THAT SOLVES NOTHING! lol. Your video was straight to the point and told me exactly what it was and exactly how it is made AND gave me a recipe idea-- i have all the ingredients you listed other than clove... but who even really likes clove 🤨🤣 thank you for this vid!

    @danieldelaney I'm up north, grew up spending summers on the farm, and listening in detail to grandad's work with the university of Kentucky to improve the strain of Sorghum to make it cook up light and flavorful. I know that too much fertilizer makes dark bitter molasses, and that cooking it is an art my grandad had mastered. Hence if you hear the term "sorghum molasses" used it is because a distinction is being made from the by product of refining cane sugar.

  • @mspatti
    @mspatti Před 13 lety +1

    Sorghum Molasses is what Is eaten in the south. It is not a by product, but the goal of growing the Sorghum these days. Although it is grown to make animal feed and also makes ethanol. Blackstrap molasses is what is eaten when I can't find anything else.

    Also, tell your viewers, that they eat products containing molasses, and may even themselves cook and bake with molasses, a lot more often than they realize. Brown sugar [which is refined sugar re-combined with molasses] is used in so many desserts and baked sweets in America. Molasses add a that browny-moist consistency to your chocolate chip cookies, without which the cookie would come out dry and crispy.

    Black strap is only good for cooking and it is more flavouring agent than sweetener. There is "fancy" molasses and "black strap" but I don't remember the name of the first grade of molasses.
    Corn bread and black strap was a common breakfast in southern jails at one time. It is not appetizing, at all.

    Civil War did not start unitl the mid 19 the century, the Revolutionary War started in the late mid 18th century, the country was colonized in the 17th century. The division of slavery really took hold in the early 19th century. 1600s colonization, 1700s Revolution, 1800s Civil War. History is a wonderful thing. So Ship embargo to the south were in the 1800s and not the 1600s and 1700s. Now if you are talking about Piracy that is a different issue. Colonies were protected by the British Fleet and the other fleets were Spain, France, and Porugal. Each had their share of Pirates or sea fairing bandits.
