    What is Vada Pav?
    A popular Indian street food snack is majorly eaten in Mumbai & rest of Maharashtra. This dish is full of flavors and various textures. A deep-fried potato being its main ingredient, placed inside a bread called "Vada". It is generally accompanied by one or more chutneys and green chili pepper. It's a very important part of Marathi culture.
    Another mouthwatering type is Sangham Vada, a very popular Solapur recipe. What makes it different from other Vada Pav is in its style of serving. It turns to be crisp & scrumptious Do try it and let us know how it turned out for you.

    Recipe for Vada Pav and Sangham Vada
    Preparation Time - 15 Mins
    Serves - 2-3
    Cooking Time - 10 Mins
    Dish Type - Snacks
    Ingredients:
    For thecha
    Garlic cloves - 7-8 nos
    Ginger - 1.5 inch
    Green chili - 3-4 nos
    For vada pav stuffing
    Peanut oil - 1 tbsp
    Mustard seed - 1 tbsp
    Salt - 1 tsp
    Turmeric - 1 tsp
    Red chili powder - 1 pinch
    Curry leaves - 7-8 nos
    Crushed boiled potato - 4-6 nos
    Chopped coriander - ¼ cup
    Green chili - 4-5 nos
    Pav - 2 nos
    For batter
    Besan - 1 cup
    Salt - 1 tsp
    ITurmeric - 1 tsp
    Baking powder - 1 pinch
    Water - as per required
    For chutney
    Whole garlic - 10-15 nos
    Whole dry red chili - 3-4 nos
    Grated coconut - 1 tbsp
    For sangham vada pav
    Pao - 2 nos
    Rice flour - 2 tsp
    Method:
    For thecha
    In a pestle, add garlic cloves, ginger, green chili and crush them and keep it aside.
    For vada pav stuffing
    In a pan heat oil, add mustard seeds, and allow it to crackle.
    Then add thecha, and stir it for a while, add salt, turmeric, red chili powder, and stir.
    Now add curry leaves and cook tadka together.
    Add crushed boiled potato, and mix it well, and add chopped coriander and cook it for 1 minute and your stuffing is done, and keep it aside to cool down.
    For batter
    In a bowl add besan, salt, turmeric, baking powder, water, and mix it well to make a nice smooth batter.
    For chutney
    In a non-stick pan dry roast garlic, whole dry red chili, grated coconut, and keep it aside to cool it down.
    Add all this to the grinder and add extra fried batter crumbs from vada and grind it all together.
    Dry chutney for vada pav is ready
    For finishing
    Make some round-shaped balls and some Tikki shapes from stuffing and deep into batter and coat with batter.
    Heat oil and fry vada, once it's done then keep it aside.
    Slit green chili in half and fry it
    Cut pao in two and apply green chutney and place vada, dry chutney, and fried green chili.
    Your vada pav is ready to serve.
    For Sangham vada pav
    Cut the pao in two halves, and stuff the prepared masala.
    Add rice flour in the batter and mix it well
    Dip the stuffed bun in the batter and deep fry the bun in hot oil till it is crisp outside, this is known as Sangam vada
    Place Sangam vada on the plate and top with sev, sweet chutney, green chutney to serve.
