- Big Black Drum Catch, Clean, & Cook Like Never Before!
Black Dream Tacos
Ingredients:
3 lbs black drum fillets
2 tablespoons olive oil
2 tablespoons vinegar
1 teaspoon chili powder
1 teaspoon paprika
¼ teaspoon cayenne
1/2 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
Avocado Crema
3-4 ripe avocado (or a container of premade guacamole, or prepared avocados about ½ cup)
2 tablespoons lime juice
1/2 cup sour cream
2 cloves garlic
Salt and pepper to taste
Mango Salsa
½ cup diced mango
¼ cup diced pickled jalapenos
1/4 cup chopped red onion
1 cloves garlic, minced
2 tablespoons chopped cilantro
Juice of 1-2 limes
Salt to taste
Cabbage Slaw
1 bag shredded cabbage, washed (red, green cabbage, and carrots)
½ cup mayo
1 T vinegar
1 T lime juice
1 T honey
Salt and pepper
Instructions:
Preheat your grill or Blackstone to medium-high heat.
Meanwhile, in a small bowl, combine olive oil, vinegar, chili powder, paprika, garlic powder, cayenne, onion powder, salt, and pepper. Place the black drum fillets in a Ziplock bag and pour the marinade in. Massage the bag ensuring all the filets are coated in the marinade. Allow the fish to marinate for about 15 minutes.
Place the marinated black drum fillets on the preheated grill or blackstone and cook for about 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let it rest for a few minutes. Once cooled slightly, break the fish into smaller pieces.
Separately, prepare the avocado crema by scooping out the flesh of the ripe avocado and placing it in a blender or food processor, Or use Prepared guacamole. Add lime juice, sour cream, garlic, salt, and pepper. Blend until smooth and creamy. Set aside.
For the salsa, combine the mango, jalapeño, red onion, cilantro, garlic, lime juice, and salt.
Warm the tortillas on the grill or in a dry skillet for a few seconds on each side until soft and pliable. To assemble the tacos, spread a spoonful of avocado crema on each tortilla. Top with grilled black drum pieces, slaw, and mango salsa. Serve the grilled black tacos immediately with additional lime wedges on the side.

Absolutely great video …. I live catch , clean and cook …. It’s great to see a really good recipe 🏆👍👍
That taco was definitely looking delicious! As someone in the culinary industry, I think that taco was restaurant quality!
Thanks for the video my brother. And I want to give a special thanks to your wife too. I do a lot of fishing out here in the Houston Galveston area and I honestly get tired of frying and bacon fish all the time I'll be needing new ideas. So I honestly appreciate it That drum show looks good Y'all enjoy your meal
Loved fishing that spot during my lunch breaks. Hope to make it out there again after summer
My mouth started watering when you bit into that taco!
Yeah, as everyone has already stated, that taco was bangin... I could already taste it as it was being built. Amazing! I also want to say that you cleaned that fish to PERFECTION! You stayed right on the bone at every cut and turn... Yeah, I noticed that! Thank you for an amazing video!
This is great. I've always been curious about how to prepare big drum for cooking--especially how to deal with the fish worms.
Fish tacos are my go to always and that looked phenomenal. Great recipe!
That definitely looked delicious good job Melanie! Nice catch Brent way to keep going even after you lost two and not giving up!
Black snake catch and cook on the blackstone?
Great job Melanie! Awesome drum catch!
Great video Brant I'm pretty sure you feel the same way I do when I'm out fishing for Northern Pike and they break me off or cut the line but it only takes one to get you some good meals the fish tacos look absolutely delicious👍
I love mango salsa. Something I like to put in my recipe is mandarin oranges .
Absolutely great job by Melanie!
You gotta harvest the collars and cheeks off of drum that size. So much good meat most people toss in the trash.
Collars are the best part of that fish.
I'm with you on that man. I could keep my family fed with just the collars and cheeks of just about all the fish Brant, Beach Bum, and Bearded Brad, cleans. I follow Reed the Fishmonger, and Victor with Landshark on CZcams. They are 2 of the best fish cleaners I've seen. They don't waste anything during fish cleaning. Collars, and cheeks beautifully done. I grew up in poverty in Pensacola, and learned not to waste anything. Cheeks and collars were all my mom could afford to buy from fish markets down there. She'd ask for the heads and backbones at Joe Patti's, they'd give her bags of big grouper, snapper, amber jack heads for $20 bucks, and we'd have enough meat to last a couple of weeks. Being old school, I literally cringe, at the amount of wasting I see in his videos, and the other guys I named. I understand they might not like to eat collars, but may know folks that do and could give them to other folks. Would be greatly appreciated I'm sure.
Good job on filling
Too much work
Hey, nice job! love the added bonus cooking part. That’s just as helpful as the fishing techniques to me. 👍
Love Black Drum..use to catch them 85lbs and up all the time ..we used big surf clams
Brant, many thanks for consistently putting up great videos, I;ve been recovering from Open heart surgeries, for the last 6 months, I can always count on you for interesting and consistent videos,,, Thank you sir, for helping me through the last 7 months, You're the best
Im terminally ill and disabled, would love to be fishing out there like ive done all my life , mostly on mountain lakes in Oregon and California, some Ocean fishing Pacific Northwest and the famous Rogue River in Oregon my home stopping grounds. But my end life cycle would love to fish new waters and species that I haven’t had. My dream is to catch a Goliath Grooper and a barn door halibut! Oh and I want to taste a coconut crab! I love dungeoness crab, snow crab or king crab/ but can’t afford them.
that looks delicous! Thanks Melanie!
When the Bacon Grease Godess cooks it, you know it’s gonna be good!
It would be a hard sell to tell people that a fish with worms after you remove them is a good fish to eat but NYC applauds your determination, BRAVO! You are very fortunate to have a wife who is a great cook my wife loves the menus at different restaurants, Man! I hope she doesn`t see this comment you will have one less subscriber. Great show!
Always pushing forward with the content of your videos Brandt, that's why I look forward to them, and adding Melanie with her outstanding recipes for the cooks is outstanding! Appreciate y'all!
killing me yet again with your cooking!! Awesome video!
I like how Melanie is cooking and Brant’s like, let me take you on this trip to try to find our snake.
Loved the video and great job on the tacos Melanie!!!
Great job Melonie. Looks delicious!
My first drum was caught off a house boat.I was about 9 years old and it was 25lb, and it was delicious from what I remember.
Fresh water drums are delicious too if you know what you're doing in the kitchen. I bet you and the wife could make it taste just fine.
good lookin fish, taco is 5star buddy, my gosh ***** allday..melanie great job...yall stay safe an godbless..
Great video and looked delicious!
Man that taco looked really good!
We got a 42" black drum a couple of months ago. In FL, you can keep 1 oversized black drum. But there was no way to transport it in the kayak, so he got lucky and went back to the school.
Was going to ask about Bacon Grease Goddess channel.
Actually fresh water drum/sheep head are pretty good too. Totally overlooked up north.
This is an AWESOME video bro!!! Keep up the hard work!
NICE Black Drum! Way to catch one along that boat “drag strip” (obviously not a No Wake Zone). I expected your surprise guest gourmet chef to be your wife- Right on! Great Video!👍
Awesome Video Brent & Melanie! Persistence paid off in the end!
Love the big fish catch and cooks bud! Keep em comin!
Black drum is one of my favorite fish to catch & eat! Them 🌮🐟 made by your gorgeous wife look like a DREAM! Thanks for the recipe. 😋👍
Iceland wow. Don't forget to try some of the fermented shark , I think its called haoulkhakkkkhulkahak , or something like that.
It didn't take long for hunger pains to set in watching that cook preparation and watching you eat that taco! 😍🔥🔥🔥💯💥💥💥
Any bigger I would not keep, caught a 22lb. one last year & let it go. up to 5-7lb. I keep. From Southeast Louisiana, catch them in the bayou in front my house, so I keep what I want legal or not. And they have worms in speckle trout also. Bayou Lafourche. Tacos looked great, thanks for sharing.
Of curse molany ur guess are amazing together 🎉🎉😊 I have following brant for years I feel he is my brother family 😂keep up that amazing 👏 con
Wow this is very cool great recipe love your wife on the channel
Great video! Thanks for the recipe too!
Hey Brant you may remember me we fished on Navarre pier growing up. I’m your age but I fished a lot with your dad especially the tarpon runs in the summer. Anyways when you were passing that rod around the trees I said “yep that’s a pier fisherman” 🤣. Good memories of going around the second gazebo on the old Navarre pier with Cobia or Tarpon. Anyways glad to see you having success here and hope all is well. Jesse
Awesome job Melanie! 👍👍 I really wish I could give those tacos a taste.
Brant did you see Ricky 👀 I swear your gonna have to give him his own channel soon 😂😂😂😂 great fish and great video ❤❤❤
Iceland is awesome!!!!
keep throwing those crabs out there with these bushel prices ya might catch a big black me 😂
Looks really yummy Melanie!❤👍🏻
Looks delicious 👍
Nice change, keep them coming.
Absolutely loved this whole video!
Freshwater Drum(aka Gaspergoo) are good to eat too. It’s all in how they’re prepared prior and cooked. Those tacos look incredible.
I’ve caught hundreds of Freshwater Drum from Lake Erie in my lifetime, and always released them. Maybe I’ll give em a try when I get back to Ohio at the end of the month. My family always releases them because we’re usually catching walleye and yellow perch for our fish dinners.
When we caught them in southern Texas they called them Gaspergoo's there.
I've caught many fresh water drum and have eaten them. They are good eating if you bleed them out as with any fish. I usually put the fish meat in a bowl with fresh water and leave overnight in the fridge. Freeze after that and I've never had a problem.
@@jimmyjaimes5268 thanks for your reply!
Freshwater drum are excellent when not huge and well iced when caught. Tastes just like croaker. My son actually prefers it over walleye, go figure
The tacos look delicious
Excellent reaction time by the LEO. 👍👍👍
Loved it!👍
Good Stuff going to do this with my next Red
Fresh water drum are like a carp way different this is much better
We have always eaten Black Drum and I think they r great !! Trout get worms too and I just cut them out and Cook Em Up!!
Catching ,, Cleaning n Cooking Fish is The Best !!!
dig a 6-8 inch hole near tree , garden compost etc put all fish scrap , nothing gets wasted ~ fertilizer
You sold me on the Blackstone. Getting one
Great catch! Way to stick it out! Nice drum!
We catch similar species here in Aus they called mulloway ... my favourite to eat and have a few good recipes too...
Thanks to your wife for the amazing looking meal you share....
Love to come over some time and tick one off the bucket list...
Thanks for the content you share
Our drums in the midwest actually have calcium stones in their temples, they actually make a drum sound with those stones. Next time see if yours has stones. Thanks Brandt.
same as the ones off the outer banks of NC., my dad used to pull those out and make jewelry out of them
@@d.faulkner8210 That's funny and cool.
My Grandpa and Grandma used to save the ones they caught in their own tackle boxes, and they had alot! Grandma had the most! I think they used the drum meat for trotlines and bank/dock lines. LOL
Got a bag of black drum ribs we’re going to fry up tonight delicious
We had a blast catching big brutes at gulf shores June 10 caught one small one are guide said we could keep. It was great. Thanks for another great vid!
Great video there 👍
thumbs up, Melanie. that looks delicious!!
That looked delicious! Great video.
Great recipe I'm going to try it one day
How about a drone shot of a feeding frenzy. Fishing it would be cool!!!
Where the restaurant look yummy yummy YUM
FEEEEEEDMEEEEEMELANIE!😎😁
Looking so good!!
Save me some tacos brother
That looked like a black snake. They eat mice, rats, frogs, eggs and other small critters. Harmless unless you're on the menu. I liked the video and the taco looked very appetizing. 5 stars for the chef.
We are gonna hold ya to that some other time with the worms 🤔🤣🤣🤣
When I was a kid I used to get inside their heads and get the stones out. I had a big jar full of them.
Really appreciate the Effort . Hoping he catches a Black Drum here.
Your face on that first break off says it all. 😂 We've all been there.
Brent I don't understand why you aint heavy.Looks like the stuff your wife cooks is delicious
I'm from Louisiana. To be fair, there's a lot of stuff on our menus that you won't find anywhere else.
Well the snake got his 15 seconds of fame !!! 🧨🧨🧨
I recommend crystalized moth balls to get rid of the snake. Worked well for me😊
Damm Brant that was really awesome! A tank Drum and a cool catch n cook 💯❤️💪💪❣️
I just saw Brant on the "Know More" channel. They used his GoPro drop over a pier and showed his footage.
Brant I catch huge black drum in Tennessee. If I grilled our drum and sat them side by side with yours, I swear you could not tell the difference in taste. I clean mine a little different because of the bone structure. Most folks around here believe they are trash fish, however I can assure you they are not. N E way I watch your videos religiously as I love surf fishing. Who needs a charter? Give me the beech or bay. BTW that taco recipe looks to be the bomb!
Outstanding as always!
One note. Have you ever harvested the Collar of a Drum? Black or Red? This is a cut that most of us throw away after the filets are fileted. It consists of the throat, pectoral fins and behind the gills. It is an oilier cut with wonderful flavor and "NO WORMS" Cook by scaling the fish after the filets are removed, split between the Pectoral fins and grill like any other cut. It will change your life,
Awesome job
I was always told the fresh wayer drum were no good to eat. However, I talked to some old locals and they told me they can be eaten. I actually like them blackened.
