I recommend using the head and backbone to make a fish stock for a soup. Tons of flavor, and allows you to use the entire fish
That's what I'm talking about. When I see someone throwing a big fish head and a meaty backbone away I just think dude you catch way too much fish. Not only the throat but the cheeks have have a nice bit of meat as well.

I guess I would try it, but it's never been something that sounded good to me
The backbones are also good for making empanadilla filling. Once the filling is cooked you can pick the bones out.
If you like to eat fish you'll love fish head soup! Greeks go nuts for it!

Great video, i love your enthusiasm in everything you do. Great recipe, I have done them before and yes, they are good. I got the idea from my friend giving me some red snapper throats. Watching you and listening at the end gave me an idea. I need to find a way to cut a slot red in a way so that I can cook it like on the half shell, but it also has the half of the throat with it. On the west coast we do that with yellow tail we call them the collar's. Good video

Filleting Reds are easy but most don't speak of the bones around the ribs that point the opposite direction (or towards the back or top of fish) & you lose a lot of meat cutting them out, unless you pull them.
My Buddy used to collect Redfish Pearls that you can locate in their heads behind the eyes I believe.
They are a pain to get but, they are pretty cool.
He had mason jars full of them. I believe they help the with the fishes balance in water & orientation.
That’s the collar my man. Boys out here in San Diego pull em off tunas, yellowtail and any other sizable fish. Grill em up. Smoke em. Candy em. Toss en in wing sauce etc. Top notch and super underrated. Good on you for giving it a go. 🤙🏼🤙🏼🤙🏼

Bro - welcome to flavor country. Hardscale fish throats are a delicacy for me that I don’t share. My uncle and I eat them - no else knows anything about them. In order: sheepshead, black drum, and then redfish throats- save them all
Salmon collars are great too. Lots of big fish have lots of collar meat.

Crazy thing is. You tossed out the rib meat. That’s just as good as the throats. Keep it intact with the redfish on the half shell. Those bones pull right out after cooked. Damn good

I was first introduced to these on a deep sea trip I took in the early 90’s. We were told make sure you kept your fish throats. I had no idea what they meant but I took my snapper home and cut them out even thkugh I had no idea what I was doing. Trial and error. PS,

The meat around the collar bone of every 'fatty' fish is delicious. Us japanese do it "Shioyaki" style, only salt, but grilled on charcoal

Red snapper throats fried is the way to go. Use Old Bay and black pepper and salt.

In my experience, a lot of people would never think to pick at the backbone of a chicken.
There's a pretty good amount of tasty stuff there.
Now, I'm curious if we should be messing around with fish organs that may be edible.

They call them collars in Hawaii and they are popular especially yellow tail Hamachi collars
Grouper throat is also amazing if you fry it up.
When I catch two keeper reds I'll do one whole redfish on the pit half shell and I'll take the collar off both fish and pu them on the pit and the other two fillets I'll fry it....the collar is the tastiest part on the redfish
You need to link up with a cook who can make a bouillabaisse. All that extra stuff makes for fish stewy goodness.

I’m all about harvesting as much as possible but I can’t eat the throats. Seemed muddy, like a catfish belly. But I’ll give it another try with the seasoning you threw on it.
