    So not about mead but I want to say thank you Jimmy thanks to you and a couple of other channels admittedly sewing based I've come to realize that I'm not the only person interested in all the little intricacies of History and the human story so because of you and a few other creators I've decided to go get my degree in anthropology and hopefully move on from there to become an archaeologist so thank you

    Funnily enough, the squirrell is actually the only animal around Yggdrasil I personally remember. I completely forgot there was supposed to be a serpent and an eagle. A squirrell running up and down a tree? Yes, please.

    Actually ...
    My maternal grandfather, and his father before him, kept bees, and two of my cousins kept up the tradition.
    Well once on a convention one of the members very proudly served "honeywine" strong "wine" made of fermented honey, for the exhibition of products out honey or beeswax, and everybody agreed it was very tasty and better than all kind of famous sweet, strong wines. Only one small, tiny , little, but sort of important problem: It was illegal.
    Here we have a law against fermenting flowers and fermenting honey.
    My grandfather also used to make wine, he had a wine stock in his greenhouse ...
    And one of my cousins is actually into viking reenacting, so maybe he could have been involved somewhere sometime, or tempted into some experimental reenactment of how honey was used ... but he might not.

    I find it interesting that released this video the day before World Bee Day where we celebrate all the reasons why Bees are important. In this case supplying the basis for Mother's Milk... erm I mean Mead! Oh, and I was glad to see that they will ship internationally. Though I wonder what the duties are to ship to the US. I shall have to look into that.

    Over 20 years ago, during my Ren Faire phase, I also made "stovetop mead" . . . twice, so I know how you feel. It took my until my second attempt to make sure it was a LIQUID, and not a syrup!

    Kinda proud to have met the guys of gold medal winning Nothern Mead that was from honey from local fields. We loved it of course. Now I am compelled to also taste the Nidhogger mead! That ginger mead sounds right for me. Excellent video!

    Been binge watching the channel all this week and I have never tried mead at the ripe old age of 34 so decided to go out of my way to buy a bottle but wanted somewhere near by and low and behold Thursday last week I prearranged a visit to Nidhoggr to buy a bottle then watch this and find it to be award winning well looks like my little trip from Hull is going to be worth it 🥂🍻

      Sometimes it's just trying to find a flavor that works for you. I've tried a lot of meads that were syrupy sweet and I didn't care for it, but I found meads flavored with sour apples or cranberries and those I particularly love!

      ​@@ericsmith3495 Ummm... it's honestly really hard to compare because Mead is kind of its own thing. It's sometimes considered a wine but I don't think that's accurate since it's fermented with honey instead of fruit. And likewise meads have a lot of variance to their alcohol content. Some are about the same as most beers at around 4-6% ABV and I've had some that were over 20% ABV. If you go for a lighter mead it would be more beer like but a harder one is going to be closer to a wine I guess and the harder ones are typically thicker and sweeter because more honey was used to ferment them.
      Sometimes they're a little syrupy so what I often do is mix a lighter and often more sour mead (sometimes Ale) with the sweeter harder mead to balance them out.

      I once soaked a piece of pork in a 1:3 mixture of mead and red wine before roasting it and I found that it makes for nice onion 'sauce' to use a little bit of mead to deglaze onions.

    I used to like the odd glass of mead but more recently found it far too sweet. I don't know if it is my taste or the mead that changed. But I guess that not adding sugars to the honey and a decent conversion of sugars to alcohol should lead to a less sweet result. I'm now very tempted. Do they supply any pubs in the Edinburgh area where I might have a taste?

      Mead is essentially just fermented sugars, much like wine or cider, just that the sugars come mostly from honey. This means that the person making mead has full control over how sweet it is.. Being super sweet is a choice; quite often they've added additional honey after fermentation to make it that sweet. But you can easily make a completely dry mead that's actually very hard to tell that it's not wine. Or cider, if low ABV and flavored with apples. ANyway that's a long way of saying that if mead is sweet then that's a choice, and someone's preference. Much like with dessert wines, ice wines, etc.

    I used to vend at a site in upstate NY, which was also frequented by a local meadery called Magpie Mead. I'm ashamed to confess I don't actually much like honey, so I was often force-fed all sorts of 'dry' meads and an abomination called grapefruit mead! I still don't much like mead, though I'm sure it was excellent--if you like honey. And after hours I often ended up a bit tipsy! If you calmly state you don't like mead, this will happen! Homebrewed beer, on the other hand...

      Yeah.. citrus is something I stay away from too. I've recently made a mead that's very difficult to tell that it's not a full bodied, dry red wine. (Using blueberries) Also oaked it, as a lot of what we think wine tastes like comes from the oak barrels. (Used oak chips instead). It really does not taste like honey at all.

    I've made some decent mead in my kitchen before, after a few bad ones.
    I've found the most important things are excellent quality honey, and patience. The mead kept improving in taste for 2 years

      A lot of what's sold as "mead" is just fortified wine flavoured with honey (looking at you, Lindisfarne).

    Thinking of making my own mead at some point! Only ever had some store bought mead, (the brewing process, was different like Peter said it is rocket fuel!) And am also gonna make some Butter beer too, cos I'm a sucker for dairy.

    I got such a chortle out of hearing the f-bombs in this video. You're usually so careful to keep those out. LOL🤣😂 I hope that Nidhogger will be able to ship to California, one day, but our laws don't allow it, right now, as far as I know. I'd love to try the ginger mead. It combines two of my favourite flavours.

    This is so informative! Really really cool. I am keeping bees as a hobby - and I was wondering if I could make mead from my honey. I might have to reevaluate that idea - but maybe I'll still give it a try. Also a bit of nitpicking: beehives are not ~40°C but ~34.5°C.

      Do it! Making mead really isn't that hard. I can also recommend the channel City Steading Brews on here, nice couple who give great tips for homebrewing and really show how easy it can be(e)
