The Best Cranberry Sauce Ever!

- Love it or leave it, cranberry sauce is a staple of holiday meals. More often than not, the canned gel appears on our tables only twice a year, only to be forgotten until the next turkey day. I personally cannot stand what cranberry sauce has become! 🫣 it should not be shaped like a can, and certainly does not need to be filled with corn syrup!!! There are of course many delightful recipes out there for a fresh made cooked sauce, but those require hands on time over a stove, and getting things just right so the sauce sets…. Who has time for that during the holidays?! Today I'm sharing my redeemed version of cranberry sauce, the no cook, only 3 main ingredients, so easy my 3 year old can make it, fermented cranberry sauce!
The fact that it's fermented should come at no shock to those of you who have been with me for a while now 😄 if it can be fermented, I'm probably choosing to ferment it! I just love the flavor, extended shelf life, and gut health fermented foods bring! I'm addicted to ferments, I know, I'm not seeking help, let me live in fermented land!

I really like how you used the immersion blender to smooth it out. I’ve fermented whole cranberries several times, but they’ve never seemed quite right. I think eating this as a sauce or relish will be much more popular.

I’ve never liked cranberry sauce in a can! Never had a hand/ homemade sauce. Think I’ll try it!
It is a totally different taste, worth trying at least once! When I brought this to my inlaws for Thanksgiving this year, my husband's grandma took the whole jar (1/2 a quart left that I was looking forward to having as leftovers!) after dinner and declared she was taking it home and would not be sharing 😂 I'll be bringing it to Christmas gatherings as well now.
Hi,I made fermented onions, can I reuse the liquid, add fresh onions and start again? Can I drink the juice too?
Hi! Yes you can absolutely reuse and drink the brine! It's also great used in salad dressings or marinades. I usually do what is sometimes called "backsplashing" where I'll add about 1/4 cup leftover brine to a new Quart of 1/2 gallon ferment and top off the rest with fresh brine but you can absolutely use 100% finished brine as well.

I use the standard American cranberries that are easy to find in the USA, you could do this with the European variety as well.

Thank you, I'm so glad you are enjoying it! Yes you could absolutely used frozen and thawed berries, you might end up with a slightly thinner sauce but it will be delicious! And since you wont have the naturally occurring yeasts from fresh fruit you might want to add just a tbsp or two cultured liquid of some kind but the honey should ultimately be able to culture a batch even without I think, might just be a slower ferment. 😀

I use allulose as the sweetener, all suger is the same, suger called by any other name is still suger.
