- This creamy chicken is so good, my nod to the widely popular Tuscan Chicken recipe. The ultimate comfort dish, rich and full of delicious flavors for a weeknight dinner or entertaining family or friends. The recipe uses readily available ingredients.
INGREDIENTS
2 Tbs Cooking oil , am using grape seed oil, olive oil is ideal
2 Lb. Chicken , thighs and drums, patted dry and trimmed excess skin and fat
1 Medium Yellow onion peeled and diced
1 Tbs Garlic, chopped
1 Tsp Tomato paste
1/2 Tsp Dry thyme
1 Sprig fresh rosemary ( 1/4 Tsp dry )
1 Tsp Dry oregano
2 Cups Tomato medley, cut in halves
1 Yellow/ Orange bell pepper, sliced
1 Red bell pepper, sliced
1/2 Cup cooking wine or your fav bottle
2 Cups chicken stock
1/2 Cup heavy cream
1/2 Cup Grated Parmesan cheese
2 - 4 Cups Baby spinach
Parsley for cooking and garnish
Salt and pepper to taste, always taste and season as you go
I am a vegetarian (thanks for the great meatless recipes) but I have a family of carnivores who will adore your recipes. You are an excellent teacher - no wasted time or words - pure instruction and demonstration.
I've recently come across your channel and I'm so glad I have. I've already made quite a few of your dishes and they are all winners in my family. This is the second dish of yours that I have cooked and it was superb, thank you for such a wonderful meal, you suggested pasta to go with it and I thought it might not work but having a bag staring at me in the cupboard, I used it, what a winner. Yes you can but be mindful additional moisture from both.
The flavor would be best wish fresh tomatoes I believe. 😉
