COFFE WALNUT CAKE
225g of butter , softened
225g of caster sugar
4 eggs , large and beaten
1 tbsp of instant coffee granules , mixed with 1 tbsp of boiling water
225g of self-raising flour
75g of chopped walnuts
BUTTERCREAM
175g of butter , softened
300g of icing sugar
3 tbsp of instant coffee granules , mixed with 1 tbsp of boiling water into a paste
50g of chopped walnuts
(add all butter cream ingredients together and mix well until smooth)
SPRINKLE WITH WALNUTS ON TOP.
Pre heat gas 4/350f add the butter and sugar mix well, add the eggs 1 at a time , incorporate well. add in the coffee paste and mix. sift the flour in and add the walnuts on top of the flour, mix well to combine.
line and grease 2x 8inch round tins.
bake for 23 to 28 mins, until cooked through.
once cooked, mix buttercream and apply once cooled.
COTTAGE PIE: BAKE GAS 4/350F 45 MINS
500G minced beef
1 onion, diced
1 stalk celery, sliced
2 large carrots, small chunked
350g mushroom, sliced
1 tin baked beans
few dashes Worcestershire sauce
1/2 tsp celery salt
1 tsp mixed herbs
1 tsp chopped garlic
SAUCE:
750ml good beef stock
150ml milk
1 tbsp tomato puree
2 tbsp cornflour
1/2 level tsp ground cinnamon
1/2 tsp dried thyme
1 tsp dried parsley
1/4 tsp ground garlic
1/4 tsp ground black pepper
mix all this very well before adding to the pot, before you removed the meat to serving dish, reduce the sauce a little.
750g white potato, mashed
150g cheese, grated

Looks yummy , cottage / shepherds pie brings back such good memories as my mum made such good ones , they were so good that one of my children even wrote a poem about them 😂xx

Edamames are lovely, kind of cross between a pea and a broad bean with a mild sweet flavour. I add them to my stir fries or veggie chillis.

Re edamame beans , in the past I have bought two small bags of them frozen in Morrison's frozen veg glass chiller cabinets, also have found them in Farm Foods frozen veg chest freezers should you ever wish to try them before yours produce the beans in your garden. Keep eyes peeled in Morrisons & Farm Foods I always buy a couple of bags if I see them as its nice to have a different bean for a change. I really enjoy your vlogs keep up the good work cheers Dougie

Cottage pie love it i don't care how hot it is outside cottage pie cornbeef hot pot usually folk have it in colder weather but ill have it all year round ❤

yep lots of aldi around, prefer Lidl to aldi tho tbh although Steve loves their steak xx

Hi hailey that cottage pielooked so lovely and so did thatcoffee cake we just had chips sweetcorn and pork chops for sunday dinner its my birthday on the 7thand ill be 70 but my dister inlaw said ill be 7 so our andy is taking me out for a family meal hes arranged it with my brother and my brother said we are going somewhere with 3 letters so i think well end up at kfc.lovefran xxx❤

I hadn't had them for a long time maybe odd one in a random container, but these have been fantastic, wonder if they're ours? eggs have changed since the chicken fiasco x

Hi Hailey meals looked amazing I done cottage pie the other day it was yummy ,2 of mine don’t like baked beans anymore and 1 don’t eat the cottage pie she’s the fussy one skylar, we took the girls out today nice ride on our mobility scooters the 2 young ones get a ride and Nicole rides he scooter 🛴 she loves it ,we went along the river public foot paths to Rhuddlan had lunch in pub Morfa table table the food was lovely xxx

She meant in relation to her in laws that used to visit most Sundays! Hailey isn’t very well at the moment so she’s told them she’s unable to stand and cook big meals for the foreseeable future.
