    Ingredients:
    Washed Potatoes (we use Idaho)
    Coarse Salt & Pepper
    Olive Oil
    Instructions:
    While your smoker is coming to temp (225-250F), prepare the potatoes.
    In a bowl, add the potatoes (we do 4-5 at a time).
    Add olive oil (enough to coat the potatoes) and about a teaspoon each of salt and pepper)
    Rub the potatoes into the oil and get coated with salt and pepper.
    Place 2-3 potatoes together in foil and close the foil around, but tenting so that steam can escape.
    Repeat for the rest of the potatoes.
    Place the potatoes into the smoker and ensure they are open.
    The potatoes will need to cook 5-6 hours, until fork tender.
    When you open the potatoes they will be a darker color and have the smoke taste. You will notice that they oil may be darker as well.

    Just curious how come the meat isn't closer to the flame than the potatoes?

      Right or wrong, here is the answer from my husband who runs the smoker.
      You are cooking low and slow to smoke the meat, so it doesn't need to be close to the heat source. Potatoes take longer to cook, smoke rises and the vent is on top of the smoker for us.
      We also want drippings to go onto the potatoes from the meat, we do this when smoking baked beans as well.
      Do you smoke meat and do it differently, we are always looking to perfect how we use the smoker.

      @@ReginaSober yeah that makes sense you do want the drippings to fall on the potatoes but I have a barrel type smoker now with no upper rack, my first smoker two racks one above the other
