So, the term "Romex" refers to one specific brand but I also know that term is used generically to refer to all in-wall electrical wiring in a home or building. Would all of the wire shown in the video fall under the umbrella term/classification of Romex or just certain ones?

I would never use anything smaller that 12 awg anywhere but especially for normal outlets. I would also recommend always using 20amp outlets. Most importantly, ensure every circuit is GFCI protected.

Robert Clarke actually it’s a 14/3 he’s using for a 3 way switch. I’d use 12/3 for the switch most homes now have nothing less than 12 gauge on 20 amp breakers. With the 12/3 you can use two wires for your runners and one wire for your line side and the other for your switch side.
It's more about how it's used. The red color just means it's not a grounded conductor. 12 and 14 ga wire is used for general loads and are used for lighting loads (i.e. 3way switches) where as 8 is used for ranges and ac where most are 240v. You can see 14 and 12 run to 125/240v outlets as well.

Great video…. As an electrician who mainly installs and services fire detection/ protection equipment, the RED colored NM has often been misidentified as Fire System wiring. I would really like to see 14/2 14/3 12/2 12/3 cable used for interconnected smoke detectors and other life safety type devices when operated at 120 or 240 vac. We actually spray rolls of greenfield, MC and even Sealtite with a selection of colors related to the life safety gear being installed. Gfci are only required in kitchen for small appliance circuits, in garage,crawl space, unfinished basements, outside and within 6 ft of a sink basin

If you are only wiring the compressor and no other things to that circuit I’d use 12/3. It’s good for 20 amps which your compressor will never trip.
An air compressor like that may require at 50 amp 230 volt dedicated circuit. Probably 6 gauge wire.
