    At a basic level, Texas sheet cake - also referred to as a sheath cake, Texas funeral cake or Texas brownie cake - is a chocolate cake with chocolate icing made in a shallow jelly roll pan. But for many Texans, it’s part of the Texan identity (and yes, being from Texas is an identity). Priya Krishna and Genevieve Ko are in the studio kitchen showing us how to make the chocolate-on-chocolate special of the Lone Star State.

      I didn’t eat tubs of those, but I loved large lumps of both as a kid. It’s just cultured dairy, similar to cheese and yogurt.

    This is the first time I've seen Genevieve Ko and I just want to say that she is so relatable, she is me lol. I do the same with the butter wrapper and I try to minimize the number of dishes and utensils. As long as there's no likelihood of cross contamination, I will reuse anything and everything!

    My great-aunt’s Texas sheet cake had cinnamon in the batter and Dr. Pepper in the frosting. So good and such a quintessential part of my childhood.

    I grew up always having these and a pound cake whenever we visited my grandparents in southern Alabama. We called it "Texas cake" and I recently learned that not everyone knows about it. I mentioned craving a slice of Texas cake and my fiancé (who is an excellent and experienced baker/home cook) had never heard of it! Anyways, loved this video - thanks for the nostalgia!

    My mom had made one of these when I came home from getting my wisdom teeth pulled. It was always my favorite cake and my family was like "ooh, sorry" and I was like "BLEND IT INTO A MILKSHAKE" problem solved!

    Oh goodness, I love y'all!! I've seen so many videos of people making 'Texas Sheet Cake' that's nothing like it. Y'all are even pouring the frosting on hot! Oh, that fudgy layer between the crusty top and the cake is sublime. Our family still makes this. It's a cherished tradition.

    Texas sheet cake has two crucial elements that differentiate it from chocolate cake:
    1 You ice it when the cake is still hot, so the icing crystalizes on top of the cake, which is a no-no for ordinary cakes.
    2 Pecans, which are as Texan as you can get.
    I also grew up with this cake at parties. It's just easy to make and delicious, and kids love it.

    My family moved to Texas when I was a kid, and this cake became one of the favorites at church fellowships for me and my siblings. We didn't know it's name until we were in our teens or twenties. It's still a fave for us.👌🏾

    My grandma made Texas sheet cake for every family get together. She used walnuts instead of pecans and pours the icing on the walnuts. I need to get her recipe.

    I only started baking Texas Sheet Cakes when I left Texas and moved to Portland. The recipe I used-Stella Parks-called for pouring boiling frosting (essentially fudge) over the cake just out of the oven. Scary as hell but delicious. Look forward to having an event again in life for which I can make this version.

      You could probably switch out the cocoa powder and make a vanilla blondie-sequence version. (If it’s the cocoa you’re allergic to) Also top it with a caramel, maple, cream cheese or even peanut butter frosting.

      if you're into, interested in and/or know any foragers and linden trees grow near you, you can also make a cocoa powder substitute from dry roasted and ground linden tree fruits! Alexis Nikole Nelson (BlackForager online) has a video about it :)

    WOW this looks amazing. Wow wow wow. I’m making this.
    Can someone smarter than me explain why the batter needs to be folded? Generally I fold when I want to maintain aeration, which is not an issue here. Is there another reason?

      the other main reason to be gentle when mixing in baking is to avoid developing gluten in the flour, since gluten can make the result less delicate and more chewy

      Then you don't have a sheet cake, & it's denser. Just use a medium to large cookie sheet and your good.
      If you don't have a cookie sheet, just buy disposables at the store. NOT dollar store types tho'.
      (FYI, you don't use dollar store types because they're too flimsy generally & doubling them messes up cook time/texture.)

    Dear Priya, I’ve been thinking about this topic for a very long time. I’m a 70 yo white American woman who cooks everything and fortune enough to live in areas with very diverse ethnic grocery stores. So the bottom line is I shop all the local ethnic GS…..large and very small. Over the years I just know what I can get what I want and my favorite shops. It’s a completed topic. Our main line GS are very white with segregated ethnic shopping isles. 😵‍💫

    I think too many dishes for texas sheet cake. Most recipes I’ve seen, uses one pot and a baking pan.

      I’d use oil. I usually use olive oil in my cakes anyway because I like the flavor and I like how it keeps the cake very moist for longer. You could also use (and bear with me, here) mayonnaise! It’s just eggs and oil which keeps the cake wonderfully moist at room temp. But I’d only use the Mayo in a chocolate cake, don’t try it in vanilla cake or else you might taste a little bit of Mayo. In a chocolate cake you can’t taste it at all.

    i mean, shouldn't this be Texas Sheet Cake with **Genevieve** and Priya? Priya barely did anything. In fact, I don't get the whole Priya fandom... whatever video she's in, she just seems to have not-much-to-offer. How is she a food editor and she doesn't even know how to fold in an ingredient into a cake batter? What is her actual culianry training and how did she rise to such prestigious ranks when there are soooooooo many other much more talented and lets be honest-- personable food peeps out there? i just don't get it.
