  • Kare Kare is a Filipino dish that features a thick savory peanut sauce. It is generally made from a base of stewed oxtail, beef tripe, various cuts of pork or beef stew meat. This dish uses chicken for those who minimize eating red meat. Vegetables, such as include eggplant green beans and Bok Choy are added. The stew is flavored with ground roasted peanuts or peanut butter, onions, and garlic. It is colored with annatto and can be thickened with toasted or plain ground rice. It is often eaten with bagoong (shrimp paste). Traditionally, any Filipino occassion is not complete without kare kare.
    Here is how to cook Filipino CHICKEN KARE KARE recipe :
    CHICKEN KARE KARE recipe :
    Ingredients:
    For chicken:
    2 lbs chicken thighs,
    1/2 tsp salt
    1/2 tsp pepper
    1 tsp garlic powder
    For the sauce:
    1 large onion, chopped
    7 cloves garlic, minced
    2 tbsp annatto powder
    2 1/2 cups chicken broth
    2 tbsp rice flour
    8 oz green beans, cut into 2 inch pieces
    2 medium eggplant, sliced
    4 tbsp peanut butter
    1 tbsp brown sugar
    2 tbsp fish sauce or 1/2 tsp salt
    bok choy/pechay
    Directions:
    1. Pat dry chicken with paper towel. Season both sides with salt, pepper and garlic powder. Set aside.
    2. Heat pan over medium high heat. Add oil. Sear chicken until browned both sides. Remove from the pan. Set aside. Discard oil leaving in 2 tbsp of oil.
    3. Add annatto powder. Stir until it dissolves.
    4. Add onion, cook until translucent.
    5. Add garlic, cook until lightly browned.
    6.Add back the chicken. Stir fry until well combined.
    7. Add 2 1/2 cups chicken. Stir then cover with lid and let it simmer over medium heat for 20 minutes. Stir occasionally.
    8. Add peanut butter. Stir until well combined.
    9. Add 6 tbsp broth into 2 tbsp rice flour. Stir until no lumps, Pour the mixture in the broth. Stir until sauce thickens.
    10. Add brown sugar, stir until sugar dissolves.
    11. Add fish sauce or salt. Stir until well combined.
    12. Add green beans and eggplant. Cover with lid and let it simmer over medium heat until vegetables are crisp tender.
    13. Add bok choy/pechay. Cover with and let it simmer for 1 min.
    14. Remove lid, continue to simmer uncovered until it reaches your preferred consistency.
    15.Serve and Enjoy! Best served with shrimp paste.
