I think I understand now how to create that " smoky " flavour.....keep it moving and keep adding soy sauce....look how the wok is smoking. Going to give this a try.

The onions almost raw, and the beansprouts completely overcooked....i can do better than that...just because its cooked by a Chinese chef doesn't make it great...

That is some weird sense of humour you have, oddball. 2 UK takeaway owners have recipes on youtube and neither use oyster sauce or rice wine.
