As a girl growing up in Texas, it was common to make a pot of pinto beans every Sunday. Never had a herd of soaking the beans until I moved to Tennessee. We always just simmer them all day until tender. So glad to know I can do that with a navy bean!
If you add a ham hock when you first start your beans with water it will make those beans even more delicious! Ham hocks are amazing for bean soups!
Don't you saute the onions, celery and garlic before you start boiling the beans?

I was just thinking about this soup a couple of days ago and wondering if I could figure out how to make it in my crockpot or instant pot.
I use a hand crank shredder and course grate half of my potatoes and I will course grate one of my 4 carrots.

Changing the subject Jan. Did you ver hear of Mr D's fried chicken at the Old Country Store in Lorman MS? Have you ever ate it? If you have, any idea what the seasoning in his flour is. He did reveal its salt and black pepper plus some "shake", the secret ingrediant(s). I live 1000 miles from MS so I haven't been there.
