- This chili seasoning has been the base of many award winning chili recipes! Now it is time to share this secret mix I’ve been using for years.
Championship Chili Seasoning
1 1/4 tbsp Garlic Powder
3 tbsp Dark Chili Powder
1 3/4 tbsp Ground Cumin
1/4 teas Ground Coriander
1 teas Cayenne Pepper
1/4 teas Dry Mustard
1 3/4 tbsp Smoked Paprika
1 teas Ancho Chili Powder
3 3/4 teas Salt
1/8 teas Ground Pepper
Mix all together
When making chili, I typically use about two pounds of meat. I start with using about ¾’s of this mix when seasoning the chili and then add more as needed. If you are using a smoked brisket or chorizo in your chili, you will likely not need more of the seasoning mix.

What chili powder or brand would be dark chili powder?
McCormick makes a Dark Chili Powder.
That seems like a lot of salt?
Ancho chilis are mild...

Ancho chilis by the secret secret secret seasoning is a stupid amount of capsaicin in extract, because lolz.

There is nothing whatever in this mix that I have not used making chili powder. It is 90% what I used to make my last batch, except that this uses more salt.
