      Correct me if I'm wrong I'm a Trinidadian and it's called chicken foot souse, if it was a Guyanese dish it would of been called souse chicken foot

    Guyana the only english speaking country in South America is full of fresh tropical fruits and all kind fresh herbs and spices which is good for making all kind of dishes especially the incredients for making the best pepper pot.

      Cold or room temperature..... as kid on fridays I would Save my week of school allowance to but me a bag from the neighborhood stand. That was room temperature because they kept it in a container on the roadside and use a plastic bag to portion out and serve u when you purchased. So good!

      Yes it's how normal ppl do it lol but not too much... Thats also when you add the level of hot peppers you want.

      Yes. But you would do a first boil and discard that water with all the impurities and foam that settles on top. Im one who prefers warm souse so I use this method myself. Plus you can eat it right after cooking using that method because all the flavours would have already mingled well in the cooking process.

      @@bithyahamsegulah56 this is pretty similar to something we call head cheese or souse in the US. It's mostly seen in the south east nowadays. It's usually made with a hogs head and feet and it's supposed to be very gelatinous. Mostly compacted meat from the head and whatever else goes into it but it's served as a jellied meatloaf on cold sandwiches etc.

      No you don't have to but it is usually pressured because it's way faster.
      You can boil of course, only it will take longer than pressuring.
