Kings like you have surely heard about the legendary Kobe beef steak: the world’s most expensive meat. Only beef of the Tajima strain, a sub-type of the Japanese Black cattle, raised in Hyogo Prefecture with its capital Kobe, is approved for being marketed as official “Kobe beef”. There is even the “Kobe Beef Marketing and Distribution Promotion Association” which defines and promotes the Kobe trademark. The Wagyu meat is being valued for its flavor, tenderness and fatty, well-marbled texture. But why is it the most expensive beef steak in the world? Let’s start by quickly diving into the history of the legendary Kobe cattle!
Cattle was brought to Japan from China in the second century AD. Until around 1868 they were mainly used in agriculture, forestry, mining and transport. Neither their milk nor their beef was consumed. From 1635 until 1854 Japan was basically isolated from the rest of the world, so there was no possibility of intromission of foreign genes to the cattle population at this time. Between 1868 and 1887, some 2,600 foreign cattle were imported and an extensive cross-breeding of these with native stock took place in the following years. In 1944 the heterogeneous regional populations that resulted from this cross-breeding were recognized as four different breeds, the four wagyu. One strain of the Japanese Black, called Tajima, is the most populous breed, making up around 90% of all breeds together. Kobe beef also derives from this strain. Still, it took until after World War II before beef consumption became popular in Japan and several decades more for the Kobe Beef to achieve its global reach in the 1980s and ‘90s. It even took until 2012 until Kobe beef was imported into the US for the first time!
