I wouldn't want to pour the olive oil into hot butter as it would impact the flavor and health benefits in my opinion - but maybe if the butter was cooled first that would work!

For an Italian sub I'd stick with the olive oil, no butter personally. But I love the mixture on toast and in cooking!

Yes. We often do. I'm sure for some recipes it may be better to use all butter - like a coconut white cake for example. But in general, yes you use it like regular butter - spread it, melt it, mix it, etc. Hope that helps.
