@@BJGvideos My best guess, having worked with the American branch of Squenix on a sponsorship before, is that he main offices in Japan don't actually know what's going on with these sponsorships because the American branch reaches out way too lake to clear things with the people who oversee the copyright drones.

Using pineapple juice as a marinade: if you use canned shelf stable pineapple juice, the enzymes are reduced. It will not be as mushy. Fresh pineapple juice or juice you get from a container that needs refrigerated has way more bromelain in it. You should not use that for long marinade times.
Quick tip: if all you have is fresh or refrigerated juice, put it in a saucier and bring it to a low boil. Keep boiling for 5 minutes at the lowest heat setting you can muster. Then let the juice cool down to room temperature naturally. A significant portion of the enzyme becomes denatured, reducing the mush potential.
I tried a similar recipe last year with chicken - figured id use fresh pineapple with it - came out so soft and mushy - never knew why!!!!!
Might also be worth noting that they pounded out the meat AND marinated with pineapple. A double whammy, so to speak.
I had a similar catastrophe with fresh pineapple and chicken. The chicken was slimey and I couldn't enjoy it. I almost never throw food away but I did toss that fiasco.

The enzyme you hate in cilantro is denatured with acid or heat. By mixing it with citric acid and allicins, you break down the chemical that triggers your genetic marker and you only get its natural flavor.

@@katl8825 you need to give it time to breakdown, but yeah. Cooking the cilantro deactivates the soapiness, as does letting it sit for a while (at least 10 minutes but sometimes longer) mixed with citric acid or allicins. This means you don't want to wash your onions after chopping if you're mixing them with cilantro.

I'm all for cooking and seeing talented chefs create amazing dishes, but I get the most joy out of the channel when I see more of what made Babish what it was all those years ago; recreating & improving upon foods found in TV/film, and now in anime/games!

Yea, the expansion has some weird quirks when describing the tacos in the game. One of the characters describes the tacos as having a crunchy(!) corn tortilla, while the Culinarian crafting recipe has it using rye (why?!) flour to make a flour tortilla, then the actual model of the tacos you see are clearly flour tortillas. Japan moment, lol.
Ngl most of this expansion feels like "yes, this is south america yes" and did a poor rendition. It's borderline stereotypes just shoved into the game lol.

7:10 a reason Alvin could hate the taste of cilantro is that, for some ppl, their genetics play a role in how the olfactory receptors on their tongue pick up certain tastes - leading to more of the “soapy” flavor enzymes that cilantro has in its leaves. I personally know a couple people who cannot stand cilantro at all, and I tell them this exact thing can be part of the reason why that is, so I guess my psych degree paid off somewhat in the end.

al pastor is my favorite type of filling for tacos but it is SUCH a PITA to make lol . The actual effort that goes into it as well as finding the ingredients... i've ended up having to make my own achiote paste because i couldn't find it anywhere but online.

Something I'd do with toasting the tortillas is put them on the burner grate itself at the lowest possible heat. Perfect toasting

Forget lowest heat - you want a bit of char.
Toast til it starts to smoke, then flip; you want small black spots and crispy edges. Might take a couple flips to get it perfect but when you do - it is _perfect_

Corn tortillas are so much more flavorful. And IMHO, much more authentic. They are a LOT harder to work with, but worth it for the corn flavor.
I can see Alvin being a Crafter/Gather main thats somehow also beaten all the Ultimates to date.

I appreciate how you keep in things like the situation with the pineapple juice in the marinade. Cooking shows can be too manufactured. You know there are times the food isn’t great, but they keep up the appearance for the camera. Own your mistakes and move forward.

Cochinita pibil's going to be an interesting thing to try and replicate. Especially if they go for the game-accurate version and try to make it be a full-grown hog that's being roasted instead of a piglet.

The closer equivalent to alpaca is probably lamb/mutton, but I'm not a meat expert. Just guessing from them being similarly wooly animals. At least around here, most grocery stores carry it.

i find portioning the balls into even smaller portions and putting it in the press 2 times till its super thin to help, it takes practice to take out without breaking but the result is much better

My wife and I use our instantpot to make an el pastor inspired recipe with a very similar flavor profile. However, we use squirrels and call it squirrel pastor, and it is our new favorite method for squirrel.
I just made Al Pastor the other day. I do use canned pineapples for the marinade. I also used "Country Ribs" and cooked them whole on the grill. It's not authentic, but is (IMO) one of the best ways to make Al Pastor at home!
Alpaca is a lean red meat, so without being able to use actual alpaca meat for the game version, lean beef would have been closer than pork.

While the pineapple juice may have affected the meat as well, I think an even bigger influence was the cooking method. Tacos al pastor are usually cooked on an open side flame and constantly spun so that no side gets too charred and as soon as you slice part off the newly exposed meat starts cooking more as well. I don't think everyone can have a shwarma style machine hence the oven, but I feel that's where the biggest difference is; take it from a guy from Mexico
tortillas should be put in the comal inmediatly after pressing, that will help with texture

I learned a new way to cut up limes for maximum juice extraction - place the lime in front of you so one of it's ends is facing you, cut off a cheek, rotate, cut the next cheek, rotate, cut, rotate cut and you'll end up with 4 cheeks and a little central rectangular bit and all of them juice way better than wedges.
Best way to know a culture is through their food. 😋

You need to cut the limes perpendicular to the grain of the fruit. Slicing from stem to stem means you can’t squeeze them nicely - all the juice shoots out everywhere

I, too, have the genetic marker that makes Cilantro taste like dish soap. But for some reason it's one of my favorites. I toss a fresh handful on tacos all the time.

Best way I ever had al Pastor (in Mexico, mind you) was in Aguas Calientes - similar to it was done in the end. Large flour tortillas, Aguas Calientes cheese (similar to mozzarella, I guess) with the al Pastor, lime, and cooked pineapple.
For some reason I never learned, they call them Gringas.
I can personally assure you that Porxie, in spite of being a product of creation magics rather than a natural beast, does indeed posses similar Aetheric Density to Alpaca. After the final days, it's certainly a much easier food to source then trying to cross the Indigo Deep for meat all the way from Urqopacha, especially given that the Pelu merchants drive a harder bargain than most Hannish merchants.
