90 year old Caterina makes Sicilian 'lasagne' with eggplant & tomato sauce

- Caterina's lasagne are tagliatelle ribbons which she dresses with a fresh tomato and eggplant sauce, using vegetables from her garden. This is an excellent summer pasta dish from Sicily! I suspect the good housewives of Sicily were making this dish long before an enterprising chef gave it the name 'pasta alla Norma'. And as stated in the voiceover, lasagne is a generic word used to describe flat sheets and shapes of pasta. Caterina uses 'lasagne' and 'tagliatelle' to describe her pasta in this session. Both are correct.
Ingredients:
2 medium eggplant/aubergines, sliced lengthways and halved
1 onion, sliced
1 garlic clove, sliced
4 large flavoursome tomatoes
3 tablespoons extra virgin olive oil for the sauce, plus more for frying the eggplant (or use a neutral vegetable oil for frying them)
plenty of fresh basil leaves (around 25g)
100g grated ricotta salata
For the pasta, halve the quantities Caterina uses (unless you are hosting a party).
250g semolina flour (semola rimacinata)
2 eggs and a tablespoon or two of water (it depends on the size of your eggs). Alternatively, omit the eggs and use 125g water
The way she's dying to show you the bread and the crotchet and knits is just sweet! The food looks delicious!

Loved that too ❤❤❤❤❤
Linda! Reminded me of my grandma
I got a little emotional when she became excited to show off her knitted pot holders 💛. Reminded me of my grandmother.
Wheb she said “i made these myself” at 4:11 i wanted to hug her so hard. She reminds me so much of my grandmother
She does it all. Crochets, makes pasta, grows vegetables, makes cheese and the rolling pin skills which always blows me away. Delicious looking meal!
Not to forget that amazing decorative bread making...she is such a sweetheart 😊💖
she should be teaching college-level home economics; post-gradute only -.-
What a beautiful woman!!! She produced a gorgeous family as well. God bless her, she is the sweetest. So cute how she proudly showed her creations. I miss my grandmothers...

One of the many things I love about this show is you watch celebrity chefs with their fancy knife skills. These women remind me of my Neapolitan Nonna who cut everything with a kitchen knife, right into the pot.
ah, yes - I call it The Nonna Knife 😀 best wishes, Vicky
This has always amazed me. Even a modest American kitchen has a set of a 8 or 10 knives--paring knives, 2 sizes of chef's knives, boning and filleting knife, bread knife, carving knife, etc.--and yet these amazing cooks do everything with a little "nonna knife" and their thumb! Like the narrator says, when all the ingredients are "i migliori," you don't need fancy, foreign techniques.
And I bet it tastes much better than pro chefs kitchen
It seems like many of them use the "Nonna knife" and this special technique which entails pushing the object towards the knife and stopping the knife with the thumb. I see it all the time.
This made me cry because my father taught me this tecnique and I didn't realize it was something my grandmother taught him. I couldn't stop thinking about her during rhis video, she was sicilian and she always used to make pasta and I loved her so much and I couldn't even imagine how much I would love for her to be here. Now I'm gonna think about her when I cut the vegetables directly into the pan, thank you for this ♡
This series features such sincere, talented women that are so proud of what they're doing. Each new video has me smiling like a goof the whole time. Thanks for this, please keep making these!
hi Olivia, I'll keep making films for as long as there are grandmothers happy to be filmed 😊🌺 best wishes, Vicky
I love how these Italian grandmothers all have 5 foot rolling pins that weighs 100lbs.
You ain't gettin' away with malarkey in their houses!
after i have started baking and cooking, i really need one of those
We were all threatened with that and with the wooden flipflop haha
Asian parents might beat children with that but its way too hard. We usually use broomstick
I'm 21 years old and addicted to the Pasta Grannies, learning from every bit of content. Thank you. This will serve for us, the future generations.
She was so proud of her potholders how sweet
I love this woman! She is so proud to show her crafts. Her decorated St Josephs breads were the most beautiful I've ever seen! 😍She needs more time to show all of her talents. So precious..thank you for sharing her with me..viva Italia! 🇮🇹❤
Her smile at the end when she knows her grandson’s loved it 😭😭😭
That's how my Italian dad taught me to make tagliatelle, who learned from his mom, who learned from hers... This was emotional to watch! I miss them all.
those who disliked, just gotta ask... r u okay bruh? like seriously. is everything going well at home?
it's so easily to accidentally click it and not notice while you're scrolling
Caterina is lovely, God Bless her.
I dislike Eggplant, Tomatoes and Garlic, my father is from Sicily my mother Naples.
But like I said Caterina is a lovely treasure
Right? Who the hell is giving any of these old women a thumbs down. Maybe because they don't give the exact ingredients? Not like anyone's going to make this stuff - it looks too hard - but they don't deserve a thumbs down for crying out loud
Yeah, i seriously don’t understand how people can actively dislike videos like these. Sure, you may not enjoy this food but the whole vibe is positive and good. We live in a strange world.
@@LogicalMan-hw3wj Try not to get bent out of shape from down votes. Its a huge world with all kinds of people. Who knows, they could be their neighbors or friends and its personal. It could be someone from Naples who dislike Sicilians on general principles. People that if you met them you would think they are wonderful too. Whatever with 8 billion people in the world who knows
Both my grandmothers were from Napoli and like all these wonderful grannies they NEVER used cutting boards, they cut everything with a basic knife while holding the vegetable. So endearing and wonderful to watch 🥰
Meravigliosa signora Italiana !!!
Auguri di cuore e che Dio la benefica sempre
Wow, wow, wow!! At her age she is running around and standing there and cook everything from scratch. I take my hat off to her. The way she works that dough for the pasta and roll it out, that's a pro at work. Will take me ages to do that. Your family are blessed to sit at your table, you are the real deal that Proverbs 31 in the Bible is talking about, doing needlework, baking those beautiful breads, look at that beautiful veggie garden... I can see there is no end to your talents. Excellent work, we can learn a lot from you. Thanks for sharing this with us.
Amazing woman, you can tell she got tiered after working the dough, povera nonnina. God bless her and her family.
I really admire this nonna and almost cried when I saw her beautiful shaped bread for St Joseph’s Feast Day.
What a lovely, vibrant lady! She does not look 90. Her grandkids are so lucky to be able to spend so much time with her and learn from her. I helped my grandma with her garden every year until she passed at 94. She would make me homemade Mac and cheese for lunch, and chocolate cake for my birthday.
hi Marilyn, what a lovely memory! 😊🌺 best wishes, Vicky
How beautiful is she!! I am only 60yrs old with health issues. I can barely even get out of bed to cook. I used to love to cook!! God bless this woman!! My German husband grew up early year's in Italy. His memories of how they started the sauce in the morning as it cooked all day long.
This has to be in contention for the least dislikable channel on CZcams. Who dare dislike lovable and talented grannies who spread joy to their families, and now the world through delicious food.
People suck and would rather watch hateful stuff than learn from older generation to do things.
@@summerjohnston5350At least 54 of them.
Nothing better ; )
These videos are really therapeutic for me. Whenever I get tensed or anxious, I watch one of your videos❤❤
hi Syeda, you are not alone - folk often tell me they find comfort in watching the signore 😊🌺 best wishes, Vicky
Lucky granskids they still enjoy the great dishes of their wonderful grandma. Grandmas indeed make the best meals ever. I miss mine.
Bravissima nonna, in formissima! La cucina siciliana è così gustosa😊☀️
It's privilege in true sense to have grandparents around when you're young. It teaches and reminds of what the end of the rat race looks like. If the grandparents are still as jovial and full of life at 90 years of age as this Italian grandma is, it's a hallmark of a life led to the fullest.
Bravissima signora Caterina.
she's a skilled tradesperson in "home craft": running a household, growing a garden, making cheese, knitting, cooking to professional standards, baking decorative breads; those kids are numbnuts compared to her, she runs like a machine.
She's an artist! So many crafts, bravissima!!
And the grandchildren are so handsome!
Reminds me of my nonna, Gina, when I was growing up. Sunday fresh pasta, sauce, eggplant, breads, figs, and all kinds of other fresh vegetables from the garden in Bronx, NY, where she lived. There is NOTHING like a grandmothers love!!! ❤️
My mother is from Sicily near the area where this lovely lady comes from. She does her eggplant the same way. I hope her grandchildren will follow her traditions.
This brings me back many years ago when my mom dad grandma were all alive. Every sunday we did this. How I miss those times. Family is everything. Because of this. I keep my life simple
I'm Italian, proudly descending from a long line of peasant-farmers in the northern eastern corner of Ital and it's heartwarming to see these videos. Kudos for all the efforts you all make to find, interview and translate these lovely example of my country's great variety of material culture and culinary traditions. With the recipes cooked by our grandmothers and he family scenes, you convey to a wider audience two of true strengths: a constant connection with the local cultivated land and the continuing - albeit waning- importance of families' heritage and traditions across the generations. Keep it up!
The smile I had when she talked about her hobbies... I love her.
She is so proud and showing off all of the things she has made.
At the end how satisfied and content she looks, watching her grandsons eat and relish the yummy fresh pasta.
These are real women making homemade food from their gardens to the table, also crocheting the pot holders just wonderful. She's so proud of her creations. She should be...she can do it all. Super woman. Beautiful.
So those who don't cook and hand craft homewares aren't "real women"?
Now this is a woman to emulate! I have a hard time with dry pasta. She truly is amazing!!
how can anyone dislike this video. Lovely Nonna and amazing cooking skills. GRAZIE MILLE for the video!!!
I recently found this channel and i really love the idea. There should be something similar for every country. The recipes of our grannies must not be forgotten!
hi Mavs, wouldn't that be great? I would love to watch channels starring elders from countries all over the world. best wishes, Vicky
The word "lasagna" comes from "losanga" (lozenge), therefore any type of flat pasta cut into strips, squares, etc. can be called lasagna.
thank you Maurizio! That's most helpful. best wishes, Vicky
Thank you for the tips. I was wondering why lasagana and then you came ^^
Aw thank you for explaining! lovely lady with the lovely recipe but I waited lasagna with eggplants looks like a spaghetti with the eggplant now I know why😀
I doubt that, because the word losagna derives from the French losagne, which firstly appeared around 1300 (and it is a derivate from a more ancient word). The most common explanation for the word is the Greek origin lasana, which became lasanum in (vulgar) Latin. The word's meaning is 'pot'. The word later eventually became the name of a typical dish that was made in this pot, we know today: lasagne. That could explain why lasagne doesn't always look like the typical bolognese version.
Very interesting, but in the end nobody in Italy calls this kind of pasta "lasagne" but "tagliatelle" or "fettuccine".
Anyway this Is the ONLY channel representing the real italian way of cooking, all the others have something fake, or too sophisticated or completely made up...italian channels as well.
Unfortunately this heritage Is slowly fading with the loss of our grandmothers, mostly in the North of Italy.
She's beautiful!
Just found this CZcams channel; it lights my heart in this crazy, dark and chaotic world. I smile when I watch these videos.
She's so Precious! ❤️❤️❤️
We should always Cherish our grandparents, their stories, their food, their lifestyle, their hardships is what gave us life and opportunity in this new age world! I loved how she shows off the Crochet hand towels. 🤗🤗🤗
Wow...this is bringing me so much joy. Look at this little lady at 90 years . I wish I could cook like that :)
Hearth, home, and a good meal, are among the finest things in life.
She's a beautiful , kind hearted soul! ❤❤❤ I miss my both Abuelas or Lolas ( what we call in the Philippines) 🙏❤😷
Her rolling technique is just *chef's kiss* flawless
90 ans... Pâtes fraîches et légumes du jardin et voilà le résultat 🤗❤️😋

Reminds me a little of my Italian grandmother. Modern so called celebrity Chefs cannot compare with the ability of the grannies! 😅
She’s so adorable! Grandmas are the best!
Her smile is so precious 💖 I love how her grandchildren are helping her, cooking with grandmas is the best!
I bought the Pasta Grannies cookbook today. Can't wait to try all the delicious recipes! 😋
hi Shruti, thank you for buying the book 😊🌺 best wishes, Vicky
Pay attention. Only girl grandchildren helps her. The male grandchildren are there to eat. This a Sicilian rule.
Of course I'm joking. I'm a Sicilian too.
La signora Caterina è fantastica, sembra di sentire il profumo di quello che cucina! 😍
This, my dear fellow humans, is food as it is meant to be. No additives, no nonsense, nothing. Just pure taste!

God bless people like her. Just beautiful human beings ❤️
Some say the magic of Italian food is its simplicity. I would say it is also the quality of the ingredients and the incredible Italian soil.
I love Italian grandmas and their cooking.
This traditional sicilian dish is known as "pasta alla norma" here in Italy, just in case you wondered ;)
Is true
Beautiful! Love her! She is so sweet, I hope her grandaughters are paying attention and learn all she has to teach them. Something is wrong with the people who gave this a thumbs down.
What a beautiful life she has! Always eating the freshest food! She's 90 years young, not old! 😃
Oh it looks so good, and I bet it tastes divine! I love the garden she picked everything from. Such a sweetheart and you can tell how much her family loves her. Patti
Omggg this nonna has stolen my heart, she is so cuute and lovely. And also her dish is making me very very hungry
Very sweet! It looks delicious! Grandmother's are the best cooks!
My granny from Mantova was used to make tagliatelle with a knife like this lady did. She also “tirava la sfoglia con il mattarello” 🤣 like this wonderful lady.
Thanks again, Vicky for letting us spend a few minutes with these lovely old grandmas.
Thank you for joining me, Joe 🌺😊 best wishes, Vicky
The boys are so blessed!!!
So beautiful, so delicious. You know those tomatoes and basil are x1000 more flavorful than what I am getting at the market.
a proud grandma cooks and grandchildren eats
Estou apaixonada por este canal e por essas nonas tão simpáticas e alegres!
Slicing tomatoes with a butter knife must be the most home cook ever, I love it.
I love the way the grandsons are eating off the same dish. As always, wonderful video.

Lovely lady ... and delicious food. What a lucky family !
this show is amazing, the amount of homemade / cuteness in theese videos is just insane 😅😅😅. I LOVE IT!
90 years old people! I want her energy and spunk at that age:)
Is there anything this delightful woman can't do?
No hate but certainly she does not speak any foreign language, does not know how to use a PC and much more. I am happy for her but times have changed. If people like her (and my grandma) had to make a living today, I am not sure how far they would get. Nowadays, women have studied, work the whole day, speak several languages, contribute in monetary terms to the family income AND know how to cook. I feel that this is often underestimated.
@@Falanghina00 I'm sure you make your parents very proud.
@@Falanghina00 different people have different skills, talents and interests dear. The top comment is exaggerated because she's got skills in different aspects and it is awe inspiring. If she were to be young today she would have been again multitalented but in different aspects
My great grand father who was from Cefalu, Sicilia, had curly hair like she and her grandkids. I miss him a lot. He always speaked to me in italian, and he was so gentile and kind.
Te extraño Nonno😢
OMG she is adorable. So vivacious. 🥰🥰❤️ Caterina.
The pride with which she showed her crochet 🥰
Thank you, Madame Caterina. My sister loves eggplant. I will not be able to surprise her with this dish, though, because she subcribes to this channel, too .
Oh, Madame Caterina, I LOVE your bread! The most beautiful bread I have ever seen.
Thank you for sharing your many talents and beautiful family with us. Seeing this makes me very happy!
Peace and love (and thanks again) from Orla in Michigan, a state in the Northern U. S. A.
hi Orla, Caterina's bread is wonderful, isn't it. It's flavoured with fennel. I hope we can return and film the ladies make it. best wishes, Vicky

She is so sweet❤️ and lasagne looks absolutely yummy😍😍😍
Ms. Vicky, definitely wins best you tube recipe of the week. I have never seen this style of lasagne, but it looks delicious. I think she might have used sicilian eggplants which are the best in the world, they have the least amount of seeds & bitterness although they are smaller than others, & need very little salt if any at all. I've eaten at places where they do not know how to cook eggplant, it ends up very soggy & is awful in texture/taste. God bless you , the pasta grannies, viewers, & everyone please stay safe.
hi Steve, Caterina's eggplants were really firm, like they wanted to burst out of their skins - and they tasted of something, which supermarket ones don't! Have a good week. best wishes, Vicky
@@pastagrannies Ms. Vicky, thank you
