Super Easy Szechuan Fish Soup w/ Pickled Mustard 酸菜鱼 Chinese Hot & Sour Fish Soup Recipe

Ingredients:
Serves 4 - 5 pax
550g of sea bass or any light tasting fish (keep bones and head for stock)
Marinate fish boneshead with 2 tablespoons of Chinese wine
Marinate boneless sliced fish with 1/2 teaspoon of salt, 1 tablespoon of cornflour and egg white from an egg.
Other ingredients

To make the soup stock

Some cooking oil
Marinated fish bones & fish head
15g of sliced young ginger
1.5L of hot water
1 pc of anchovies stock cube
Putting the rest of the dish together

Some cooking oil
15g of minced young ginger
5 pc of bird's eye chill (deseeded and chopped finely)
5 cloves of chopped garlic
200g of pickled mustard greens (sourish type)
Add soup stock
Add sliced fish

As a Singaporean living in aus and paying $15 for a bowl of fish soup, I thought why not try this at home. and I have.. with real and mock fish..its delicious😋! And I save $$$
Thank you for posting this recipe. I just made it and it was amazing! Brings me back to my childhood. I really appreciate the straining step. This is crucial because it also works to keep any leftover fish scales out of the soup. I eat he fish separately with a soy sauce dip for this reason - so I can pick our any scales the supermarket didn't remove. Thanks again!

Oooooh chef love fish/shellfish dishes. Googled pickled mustard greens. Sigh not sold near me. Would you have a recipe for it? 😀 If not, found a few.... So, if I just toss in mustard greens say fresh, would I destroy the recipe? Could I just let greens sit in vinegar? Btw great intro, you're both amazing.
Opps, so so sorry, Rebecca. We're really behind replying the comments left for us. The essence of this dish is really the pickled mustard greens so if you use fresh mustard greens, it's not the taste we're gunning for. Hope we're not too late in replying you.

OK so my ang moh husband likes the snapper fish I used but I find it muddy tasting... suggestions for other types of fish for this soup.. clean tasting preferred

Hi Iris, so sorry for our late reply. Egg white will help create a nice slippery texture on the fish which makes it taste better. You can use seabass like us or snakehead. In general, we prefer fish without too many small bones. This is more kid friendly. Hope this helps. Happy cooking!

Another great dish. I would have it as a one-dish meal with steaming hot rice. Since I love sucking bones, I would pick off all the remaining meat from the fish head and bones too

@@spicenpans - Indeed, I did! Wonderful flavors. And I'm now obsessed with pickled mustard greens. I've just been eating them with steamed rice, and fried garlic in hot oil -- so good!
