    If you soak the beans over night the cooking time in a pressure cooker is 5 to 7 minutes. I include 4 or 5 bay leaves which I remove after cooking. I've had the same pressure cooker for 45 years and have replace the gasket only once.

    I prefer cooking my beans without soaking in a crock pot for at least 6 hours. I just add a large chopped onion and a few chopped garlic cloves adding salt, pepper and other spices to taste with some kind of meat. Usually two or three pounds of pan fried hamburger meat or left over Brisket. But if I don't have time I will use a pressure cooker with the same ingredients. The longer you cook the softer the beans become and we like the water to become a thick delicious roux if you will.

    "One hour" in a pressure cooker??? What is the point of using a pressure cooker then? The entire reason for using a pressure cooker is to cut the cooking time and save energy, by the "one hour" you state hardly achieves any saved time or energy!

      Hi Beth, No , do not even attempt, wait until there is no more steam being released from the top nozzle. ( The one that allows steam to be released while cooking) otherwise you will risk an explosion which can can serious injuries and distraction of your staff.
